We go to Cambodia every year for the last five years after our retirement and we've never tried those sun dried clams. Those are good size clams from Stockton. Thanks for sharing!

I have not tried on other clams yet. We use this marinade or method of cooking in the sun for these clams because of it’s size and also the shell is not as thick so the heat from the sun cook it just right.

I had to get me the white shell clams put in the pot without water and small heat and get the meat out put some garlic, red chili, basil and fish sauce a few hours good to eat very delicious.

You must be beyond delighted to see husband ohh-ing and aww-ing and lip smacking over your cooking. If the clams are still closed how do you know when it is ready to eat or dry enough to eat??

When sun drying the clams does not really open. If they do, it can mean they are bad or likr just empty shells. You are suppose to sip the clam juices as you open 😂 but if you boil them, then yeah they will open. You know when its ready to eat by just tasting one after it’s been drying. A cooked sun dry clam will not have a fish smell or taste (cha-arb). The husband will tell me how it is. Believe me, there as been several times he is very opinionated about my dish. To the point I am like “whatever, next time you cook your own” 🙅🏻‍♀️

That is so ghetto drying it in the car wouldn't it stink up your whole car

Having done this for years I can testify that is does not stink at all. Yes maybe the first 10-15 mins when you put it in but after it is cook it no longer smell because the clams does not open it until you crack it open and you do not eat it in the car therefore no smell.

My grandma use to make this and she put in this large flat container with this net to cover it so flies won't go on it. It Cooks better outside
