RECIPE:
Easy Mummy Cake Pops (makes 15 cake pops)
INGREDIENTS:
1 box dark chocolate cake mix, plus ingredients on box label
1 cup chocolate frosting
2 cups white candy melts, divided
Sucker sticks or colorful straws
Small black candies for eyes
For the icing:
1 cup powdered sugar
1 egg white
½ teaspoon lemon juice
Piping bag fitted with small tip
Cake pop stand (like a cereal box with small holes poked throughout)
DIRECTIONS:
Make the cake according to the directions on the box. Bake and allow to cool to room temperature.
Cut the cake in half and reserve one half for another use. Break the cooled cake up into crumbs. Add the chocolate frosting and mix well. Using a tablespoon, scoop out the mixture in rounded spoonfuls and roll tightly into balls. Place balls in an airtight container and refrigerate for 30 minutes.
Once the balls have cooled, melt the candy melts. Add 1 cup of candy melts in a microwave safe bowl. Microwave for 30 seconds. Remove and stir well. Return to microwave and microwave for another 15 seconds. Remove and stir again. Return to microwave and microwave for another 15 seconds. Remove and continue stirring until all the chips have melted.
Drop one cake ball into the melted candy melts. Use a spoon to lightly coat the ball. Take one cake pop stick and dip it about 1 inch in the melted candy melts. Insert the coated end of the stick into the cake ball and carefully lift the cake ball from the candy melt. Slowly spin the cake pop to evenly distribute the coating, allowing the coating to cool and harden around the cake. Place the coated cake pop on the stand to cool completely.
To make the icing, add all the ingredients to a mixer. Mix well for about 2 minutes. Add the icing to a squeeze bottle or piping bag. Pipe the mummy wrappers over the cake pops. Add candy for eyes while the icing is still wet. Allow the icing to set, about 10 minutes.

About Christy Carlson Romano:
Christy has been a working actress and singer since she was 6 years old. She moved to Los Angeles with her mother when she was 14 to star in the Disney Channel franchise, Even Stevens as Ren Stevens alongside Shia LaBeouf. Christy enjoyed many years with Disney gaining an Emmy nomination for her voice work as Kim Possible and starring on Broadway in Beauty and the Beast. She went on to balance her college career at Barnard College, Columbia University with filming movies for ABC Family including: ‘Campus Confidential’, ‘Taking Five’, ‘The Cutting Edge 2: Going for the Gold’, and ‘The Cutting Edge 3: Chasing the Dream’. Christy returned to Broadway in her mid twenties and learned to puppeteer in the Tony-Award winning ‘Avenue Q’. Christy was married to her husband on New Years Eve , 2013 in Banff, Canada after having met in a screenwriting class in college. She became impassioned with directing and made her debut in Lionsgate’s “Christmas All Over Again”. While she still works as an actress, she enjoys living in Orange County with her husband, Brendan Rooney, and daughters, Isabella and Sophia.
