This Simple and yet Tasty recipe is sure to be always on top of our list when deciding what will be on the table for the day. Aside from its simple ingredients this Filipino dish is at the same time very easy to cook and Healthy. This is perfect with steamed rice and “patis na may kalamansi at sili”.
Ingredients:
1 whole Chicken (chopped)
4 medium sized tomatoes (the more the merrier)
Spinach
1 medium sized Bell Pepper (sliced)
Minced garlic (4 cloves)
1 medium sized Onion (diced)
1 tablespoon of fish sauce
1 cup chicken broth (or 1 chicken cube diluted in 1 cup water)
2 - 3 tablespoons corn oil
1 teaspoon Ground black pepper
How to cook:
1. Prepare the Chicken meat and cut into small parts.
2. Heat 2 - 3 tbsp. of corn oil and sauté the garlic and onions.
3. Add the sliced tomatoes.
4. Cover for 3 minutes and let the moisture of the tomatoes settle.
5. At this point, you can now add the chopped chicken.
6. Sauté until medium brown.
7. Add the fish sauce and continue to sauté.
8. Pour 1 cup water.
9. Add a cup of Chicken broth or 1 chicken cube diluted in 1 cup water.
10. Cover and simmer on low heat for 30 minutes.
11. Drop the sliced Bell pepper and Ground black pepper then cover and cook for 3 minutes.
12. Add the spinach and cook for 3 more minutes.
13. Serve.
