King Arthur Gluten Free Pie Crust
Ingredients in the box for 2 pie crust
2 sticks of cold butter
3 to 6 TBS ice cold water, and more if needed.
Work the cold butter into the flour mixture until pea size shape forms with butter and flour. Drizzle tablespoons of ice water into flour and butter mixture. Place the mixture onto wax paper and roll out. Put the crust into the pie pan. Enjoy with you pie of choice. Thanks for watching

You need to add more water. It doesn’t matter what the box says, if it’s too dry it needs more water. I just made a pie this evening using the gluten free pie crust mix and I added 9 tablespoons of water and the dough had a very soft pliable and workable consistency similar to my usual homemade flour pie crust. It is of course a bit bit more delicate but it was pretty easy to roll out and get into the pie pan.

Yes, you needed to add a little more water. Try a teaspoon at a time so you can find the balance.
