SISIG means "to snack on something sour", it is a Kapampangan dish, composed of pig’s head and liver, mixed with onions, chili and seasoned with kalamansi or lemon. It is served as a dish or pulutan and best partner with beer.
Ingredients for boiling pork head:
1.6 kg pork head
2 stalks of lemongrass
1 tbsp of coarse salt
2 tsp of pepper corn
Water (enough to submerge the pork)
1.6 kg pork head (grilled)
2 pcs chicken liver (grilled)
2 pcs yellow onion (diced)
1 big red onion (diced)
2 pcs red chilis
2 pcs green chilis
7 pcs of calamansi
3 tbsp of mayonnaise
1/2 tbsp of iodized salt
2 tbsp of butter (for sizzling plate)
