Thanks for the comments. What we call hot smoking is anything that cooks the fish - the traditional smokers bought from a tackle shop would "smoke" it in about 30 minutes. This cures the fish slowly over four or five hours at less than 60 degrees. I have tried washing with salt water, washing with freshwater, air drying, towel drying etc, and they all taste the same, hence going with the easiest route!

it looks like you have "smoked" it a little to much ...too much smoke can make your fish bitter and is very bad for you ,carcinogens etc
