Greek Meatloaf: • UAE mein Business Woma...
Ingredients
• Chicken mince 1 kg
• Breadcrumbs 3/4 cup
• Oregano 2 tablespoons
• Garlic paste 1 teaspoon
• Onion 1/2
• Fresh coriander 2 tablespoons
• Black olives 1/2 cup
• Green olives 1/2 cup
• Eggs 2
• Ketchup 1/4 cup
• Salt 1 teaspoon
• Black pepper 2 teaspoons
• White vinegar 1 tablespoon
• Mozarella cheese 1/2 cup
Glaze
• Ketchup 1/4 cup
• Oregano 1 teaspoon
• Paprika powder 1 teaspoon
• Garlic powder 1 teaspoon
Preparation
1. Preheat the oven for 30 minutes at 180*C with both upper and lower rods.
2. Finely chop the onion and parsley.
3. Add chicken to a mixing bowl. Add breadcrumbs, Oregano, garlic paste, onion, eggs, fresh coriander and cheese and mix well. Squeeze some olives and add to the mix.
4. In a small bowl crack eggs. Add ketchup, salt, black pepper and vinegar.
5. Mix well and add to the mince mix. Mix thoroughly.
6. In a separate bowl, prepare glaze by mixing together ketchup, oregano, paprika powder and garlic powder.
7. Grease a loaf pan with butter.
8. Add the chicken mince to it and spread evenly.
9. Pour glaze over it.
10. Top with some jalapenos.
11. Bake the at 180*C for 45 minutes. Use only lower rod.
12. Insert toothpick and it should come out clean.
13. Let the meatloaf rest for 10 minutes.
14. Cut into slices and serve.
