Fantastic to have that type of fresh produce. Great memories. Growing up we grew tomatoes, carrots, peppers, garlic. The basics. Nothing is better that homegrown :)

My mother was German (Berlin) and she made this every summer with English cucumbers that my father grew and she would add a small quantity of lemon zest, the fragrance was pure summer. I still make it, I am 76. This also reminds me of all her wonderful recipes, including potato salad.

I mix the sour cream, vinegar, salt, dill and sugar in a separate bowl. That way you can get a consistent mix before adding it to the big bowl. I like to go with half the recommended sugar and twice as much vinegar. Family is from the Rhineland

I’m 73 yrs old and I’ve been eating this all my life. My maternal and paternal families are from Germany. All the dishes I grew up on were German. Love this food.

My grandmother was an Austrian immigrant in 1921. She shredded the cucumbers and added sugar into the vinegar...no sour cream or yogurt...liquid was clear. It's delicious.

My mom made this while I was growing up (she is from Reichenburg, Germany) and she would soak the cucumbers in the vinegar for 20 minutes before adding the sour cream. We would eat this cold served over warm fried spaetzle. Try it, it's amazing.

I almost cried when I saw you pour out that cucumber juice... next time, add it to a shaker with some ice and vokda (vermouth optional) and quick stake, strain, and garnish with one of your cucumber slices... fabulous drink for the chef. :)

@@peggywinslow408 Yes I did but sometimes while filming need to move things along. And yes, it is so good. Take the cucumber water with some tonic, lime and a little gin and you have a great drink to go along with your salad!!😁

We were stationed in Germany 40 years ago and a German friend taught me how to make this fabulous salad. I made it for years and forgot about it after some time. I love it and thanks for reminding me about it! I'll start making it again

My G'pa bought me that slicer from Burpees back in 1973 when I was a newlywed! I still use it often....love my gadgets that have made it for 50 years now! I slice my onions on my slicer also...thanks for the recipe!

I’m half Sicilian and a quarter German and Polish. Thankfully I come great cooks from both sides of my family. I grew up eating this and still make it for my family. My husband loves this salad as well my step daughter. It just tastes like summer to me. I actually made this the other night with som grilled Italian sausage.

My mum is Ukrainian and was forced to go to Germany during world war 2 to work as a domestic on a farm in Gieselden. She learned to cook many German recipes and this was one of my favourites. I actually make it to accompany beef goulash with German potato pancakes.

Some of the best kitchen tools I have are antiques from my grandmother and great grandmother who are both Norwegian. Incredible stuff that lasts forever and works super well. Great video !

My mom was Polish, We would eat this and sometimes she would slice up lettuce and add with the cukes before salting then squeeze out the water and dress. The other cucumber salad she made was just cukes dressed with salt pepper oil and redwine vinegar. All my grandkids even the toddlers love this salad

My wonderful German Mother from Kassel Germany taught me how to make delicious Cucumber Salad when I was a child. We do not add onion, however, I think this is a nice addition and will make it this way next time. I enjoy it with a good steak and a baked potatoe. Thank you! 🥰

My grandmother was from Germany also. She would squeeze the water out of the cucs after setting in salted water all day, then add crushed garlic and sour cream and top off with paprika..

My mother in law always made this and I thought it was something from the south, but my father in law was German so I guess she learned from his mother. My kids are always happy when I make this especially in the summer with some fresh corn on the cob. 😊

gotta share a Texan cucumber salad that we always had when we made BBQ.... Just slice and peeled cucumbers into a bowl, top with chopped onions, add salt, and be generous with black pepper. Pour white vinegar to barely cover them. Refridgerate and then enjoy! I hope you try it.

3 Peeled, sliced Cucumbers And Salt let sit 20 min. Pour out & drink the juice. Thinly sliced onion More salt, 1 cp sour cream or yogurt. 3 TB Vinegar, 2 TB sugar, 3-4 fresh only Dill. Season to taste.

A cousin to this salad: cukes with onion and tomatoes, all thinly sliced, floating in a bath of diluted vinegar. Great salad, often combined with steamed sweet corn--on the cob, of course--for an easy summertime dinner.

My mom made this salad when I was growing up in NJ. I had just made some for lunch about a month ago. I never knew it was European. So refreshing on this hot & muggy summer days & nights. I put sour cream & mayonnaise & milk with vinegar & spring onions instead of dill & no sugar. Was great. So easy!!! Ty for posting. Ty 😁.

More cucumbers from the garden than I can handle has me thinking about the cross country trip when I stopped for lunch in a little north Iowa small town cafe. The place was packed! I got the last counter stool by the door and ordered a sandwich or something. The gal says- “you want the cucumber salad don’t you?” Not being familiar, I was hesitant, but she insisted I wanted the cucumber salad, so I said OK. That salad, when it was seasonally offered in that cafe, was apparently the reason folks drove from miles around and lined up to get in. One of the few things I’ve eaten in life that stand out as memorably good!

I was raised with Hungarian recipes, and I make these almost the same, but do not add sugar or vinegar. I don’t measure, just throw in sour cream and chopped dill, and fresh black pepper. Everyone loves my cucumbers. Glad you are sharing these great old time recipes.

Yeah no Mayo or dairy!!!. Great salad for summer! We weren’t big on Mayo or sour cream in my family. I like using Greek yogurt a lot nowadays, but not for cukes! Same with coleslaw! No Mayo!

My maternal grandparents came to the USA from a small village in Northeastern Hungary 🇭🇺 in 1912 with their firstborn daughter, not my mom. My mom learned to make a similar cucumber 🥒 salad from her mother and, later, taught me to make it. The biggest difference is the omission of onion, dill, and sugar. We add Hungarian mild paprika and black pepper. My mother and I always use Knudsen Hampshire sour cream because it most closely resembles the sour cream my grandparents made. I am going to try it with onion and fresh dill the next time. I will still put in paprika and black pepper. Thanks for the video. I enjoyed watching it very much.

This was and is a summer staple in our family and my German Austro-Hungarian grandmother passed it down to all of us. Since she never measured anything, nor did my Mom, nor do I 😅, it's great to know the measurements to use for my family recipe collection. 😊 When I'm cooking, I feel my Grandmother and Mom "speak" to me... My mom used to make this but after slicing and salting the cucumber she would put them in a bowl place a small plate on top and stand something heavy on the plate and let it sit for an hr or so to draw out the water. It’s my fav salad also

I always cut the ends off of my cucumbers before I peel them, helps with the bitterness of the cuke and I always feel all of the green because like you said, the greens can be bitter. Cutting off the tips of the cucumber's is my grandma trick and she was German.

My grandma made this for my German grandpa all during the summer each year. They lived in a different state so when I got to visit for a couple weeks each year this was the one dish I was seriously thrilled about. I can remember when I was about 9 years old and I wanted my 3rd helping and she said no, that I had to save some for everyone else. 😂 Lesson learned. It’s just an indication of how much I loved this. Over the years I’ve tried replicating it from memory and it was never quite right. Thank you, I’ll try your (mom’s) recipe for sure!

Great recipe. Thank you....Just an FYI for anyone who uses lite sour cream, lite mayo or anything "lite" (light), it's not better for you and in most cases it's worse.

My great grandmother was Bavarian, lived to 103, and shared with me many secrets. One of them was a relish she would make when the dill was in its prime. Garlic, green onion, and dill leaf (and finely chopped stem) were added to a salt and white wine vinegar brine, and put up for winter. She would adjust the recipe to accomodate volumes, and would also occasionally add finely chopped fresh mint. Sooo good!

My mother was German and my father American. We lived in Germany from 72 to 96. I used to buy my gurkensalat at HL. Delicious. My mom did make tomato and cucumber salad but she bought seleriesalat and karrotensalat at HL or Aldi.😅

Love this! Unfortunately it would never fly with my "beans and rice" Texas in-laws. Every single one says they are "allergic" to cucumbers?? So it's all for me if I make this salad. Which I do and I eat it gladly!!! Yumm and thanks for giving me more ideas to make cold food in these HOT HOT HOT summer South Texas days.

My German grandmother made this salad but prepped the cucumbers and onions a bit differently than yours but somewhat the same principles. Cucumbers and onions sliced thin and then layered in a large bowl. One layer of cucumbers and onions then salt and continue until bowl is filled, salting each layer. Place a plate on top and add a weight (e.g. large can of tomatoes) then allow to sit for as long as possible. Pour out the water then rinse under cold water and - here is the crucial part - squeeze the cumbers and onions by hand. They will be translucent and then continue to finish as in your video. Just a slight variation.

I was taught doing it the same way with the cukes and onions,usually starting the soaking in the morning to be ready for a later meal, and draining but not rinsing. Just letting them drain well and continue with the dressing. SO Good!!

My Mom would slice the cucumbers and onions and put them in a bowl together add 1 tray of ice cubes on top and sprinkle 1/4 cup salt over them and then a little cold water also to get the ice and salt working. Leave it sit about 30 minutes. Pick out the ice. Dump the whole thing in a colander and rinse well. They don't come out salty. The dressing is the same as you are doing but she added some black pepper also. The onions are slightly pickled and the cucumbers are REALLY crunchy. Wonderful and refreshing on a hot summer day !

My mom was born in Romania and migrated to Germany. Her recipe is the same except she used crushed garlic and ACV, and black pepper to taste and no dill or onion. I let the salted cucumbers sit in a colander overnight. It is a favorite for sure.

Hi everyone, I’m from Eckington, near Sheffield, UK and I’m highly delighted to see you making this wonderful cucumber salad. Lovely memories of summer with my family. Thanks for reminding me - I’ve only made it twice this year! My father used to make it every summer and we loved it and I still do. Out of our family of 5, mum dad and three sisters I’m the only survivor and I’m 72. I’ve never had the recipe so had to guess. However dad didn’t include dill or sour cream. It’s the first I’ve heard of it and I will certainly try it as soon as I have fed our gorgeous furry friend her breakfast ( Today is Monday 4/9/2023). I peel and finely slice a large onion and peel and finely slice the whole cucumber. Then put everything into a container adding a good few teaspoons of sugar and the same of salt, sometimes less salt. I pour 3/4 pint of white vinegar ish with about just over half a cup of water and mix well. But keep tasting until it’s just right - 😅. I’m certainly going to try ACV with the mother today, can’t wait to make it. Oh also may try the honey tip. All great ingredients imo! I’ve really enjoyed reading the comments here, thanks everyone for sharing. I’ve subbed, liked and shared and will be looking forward to more of your recipes in the future thank you. I'm definitely trying this as it reminds me of a favorite treat of mine: many layers of thinly sliced cucumbers, chopped dill, salt, and black PEPPER between two slices of 100% whole grain sourdough rye bread with a generous amount of homemade mayonnaise. It is not unlike raita which I also like but the dill would be a nice variation. Guess what, my version will have black pepper. :-)

This became my all-time favorite salad when I was 13 and I never had a recipe, but had always craved that salad. So, when I grew up I just made my own version and it was perfect. Recently my daughter just begged me to please make her that cucumber salad that I used to make when they were growing up. I just happened upon your video and was curious to see how different our recipes were and I'm so glad to see that your mom and I make the exact same salad 😂, with the exception of the dill. I've never had it with dill, but I'm definitely adding it next time. My 4 kids LOVE this salad, and I'm sure my grandbabies will too! Also, I didn't know to pre salt and drain the cukes... Great idea! Thanks for the video and the added tips!

I'll be trying this recipe, it sounds delicious. The only thing I will change is the vinegar. I would prefer to use the brine from my pickles, I think it would taste good. Thanks for sharing.

This was very tasty. I remember eating this as a kid. Didn’t know it was German style. We did eat a lot of German and Polish type food, so the salad makes sense. Mine was foamy after I mixed it up. The taste was still great and the foamy-ness added a very light texture.

It tastes ok without sour cream or yogurt if you can not have dairy like me. I soak thinly sliced red onion in cold water , use no salt but soak the thinly sliced cucumbers in ice water vinegar and a touch of sugar. Then when ready to serve added drained thinly sliced red onions and dill serve in small dishes. It is very crunchy fresh and almost calorie free. My Mother-in-law made it this way for me because my husband preferred this way t and too. My own Grandmother from Alsace and Lorraine made it with sour cream but I could not eat it , since I can not digest dairy unless it is baked in something. ❤

Looks like a keeper. I mix the vinegar with the sour cream before adding it to the salad. About thick as paint. Also black pepper goes so good with cucumber it couldn't hurt. Half a cup of Dukes mayonnaise plus half a cup of sour cream plus 1/4 cup of Braggs apple cider vinegar is a great coleslaw dressing. Adjust by adding 1Tablespoon more vinegar at a time.) Then two heaping teaspoons of honey, two heaping teaspoons of dark brown sugar and three heaping teaspoons of McCormick hot Madras curry powder. Then 3/4 teaspoon each of sea salt and black pepper. Quarter a large green cabbage and crosscut into 1/2" or thinner ribbons. Toss cabbage with cashews, golden raisins (or dried pineapple chunks cut into smaller pieces) and coconut ribbons. All for curried Coleslaw. I got off track pretty bad. Sorry.

A million, “Thank Yous”, for the flood of sweet memories of my Mom’s very same delicious cucumber salad that accompanied many dinners when I was a kid! We are of German-French ancestry, (although you’d have to go back 2-3 generations to meet those who actually lived in Europe), & I’ve made & enjoyed sharing this salad with countless family & friends. This salad ranks right up at the top of favorites but has to share the Number 1 spot with what she called, “Dutch Lettuce”…iceberg lettuce with lots of crispy bacon & covered with the slightly warm ‘dressing’, (which was chopped onion sautéed in some of the bacon drippings, vinegar, sugar & cracked pepper to taste & enough water to tame the potency of the vinegar). It’s known as “wilted lettuce” by some, but I still love to sneak the bowl to the kitchen & drink some of the sweet & sour, balcony flavored “ dressing”that’s left after everyone’s gobbled up the lettuce. Yum yum! Thanks for the happy memories of my Mum’s delicious cooking!! ❤️👍👍😋🇺🇸❤️

I have my mother's slicer which is exactly like yours. She gave it to me and I love it. I have tried others, and always go back to this one. It has to be at least 65 years old. I am not German but my mother embraced all food cultures.

Different areas of Germany must make cumber salad differently, We just use thin sliced cucumbers strained, vinegar, salt and pepper, adding a little bit of water, I have had the Greek version too with plain Greek yogurt, a little bit of lemon, and mint. I love cumber salad!! I love homeade pickled beets too...My mom is from Germany, my Aunty owed her own restraunt, I have some faund memories.

In Austria, we followed this recipe and added a dash of ground caraway. We mixed the dressing in the salad bowl, added our veg on top, and then tossed. I'm headed to the sore to add this to my dinner menu! for tonight!

I remember making a cucumber salad at my future in laws that required a layer of cucumber, then salt, then cucumber, then salt, etc. It sat for a good amount of time before you rinsed it off and made the salad. While it was sitting my now husband came into the kitchen, said something like 'sneak attack, and grabbed a slice as his mom and I both yelled a warning. Of course that didn't stop him which gave him a mouthful of salt and us a story to tell everyone at that dinner and many to come.

Try some little bit of creme fraiche, instead of sour cream. Gives a slight sweetness, and creamer finish. Lovely flavorful recipe. ❤
