i ended up making this for my birthday a couple weeks ago so if you plan to make it here’s some tips: - this takes a very long time (took me roughly 9 hours as i made the chiffon cake, nirikiri dough, and vegetarian gelatin from scratch), so be prepared to stand all day - the nirikiri dough can get very sticky. i made mine from scratch as i could not order white bean paste in time and it was a complete mess to work with. this made cutting the dough to make lily pads and the flower a complete nightmare. so if you plan to make it from scratch, be prepared to make multiple batches if needed - let the jelly layers settle for a few hours. i unfortunately got too impatient as it was well past 2 in the morning when i got the the jelly part. it didn’t settle correctly and all the koi in the middle ended up sinking and flipping over. hopefully this helped someone out there and good luck!

Gee whiz, I can imagine if you had a little girl, you making the best 'little mermaid' cake for her that would blow her socks off. Also, saying this took too long is like Da Vinci lamenting how long it took to do the Sistine chapel ceiling. This was brilliant!

Love this on so many levels!! Thank you so much for sharing your art work with us ! Could you please explain how long you generally wait between layers? I'm worried that the 2nd layer of jello won't turn out right if I wait too long.. or that the 1st will come undone if I pour too soon... Maybe the same concern for the mouse...

the mousse layers set really quickly, i only waited around 30 mins for each! how quickly the jelly sets depends on the brand you use, but I only waited around 10 minutes between the two layers of jelly, they don't need to be fully set, the heat from the second layer won't melt the first

Not only does this visually look stunning, but the lychee jelly means it'd also be delicious
