Violetta Azul depending on where you live there might be an Asian grocery store nearby. If not they have a lot of ingredients online.

There’s a lot you can sub. Some of the spices and miso you can’t, but you can buy them on the HMart website. It’s the fresh stuff that’s hard to get a hold of, but that’s when substitutions come on. For example, I don’t have access to Korean radish tops, but I do have access to plain radish tops and also to turnip greens, both of which have that subtle peppery taste.

Most veggies can be found at any asian market, and everything that's nonperishable can be bought online. If you don't have an asian mart nearby, most recipes will either offer a substitute or tell you to just leave it out.

You can substitute 1 tbs rice vinegar and 1/2 tsp sugar instead of the Mirin. I'm a vegetarian, so I can't use the kelp anchovy broth. I'm going to try using vegetable broth with 1/4 to 1/2 tsp Marmite to attempt to duplicate the saltiness and give it some good flavor.

This video is great. Just thought that I'd mention that I have put those blue kitchen towels in with the laundry before, so you don't have to use a fresh one each time. But the tofu bag is cool (and probably goes into the laundry too anyway).
