Learn how to make palace-style yujacha, a traditional Korean tea made from the yuja or yuzu citrus fruit.

Yujacha (유자차) is also sometimes called Korean honey citron tea or yuzu tea. Yuja-cha is a great hot drink to enjoy in the wintertime. It is high in vitamin C and is often used in fighting a cold. It is also a popular hangover remedy.
I thank my mother-in-law, Cheong Ja Shin, for teaching me how to make palace-style yujacha.

I feel in love with this tea last winter when I found a version of it at Costco. I was so happy to find it again this past winter but figured it may be easy to make. Thank you for sharing. Now to find the proper fruit...🤔👍

I just got a large Honey Citron and Ginger Tea from Balance Grow (Coscto). I add more ginger as it only had ginger extract. It also has Sugar and oligosaccharides (looks like some in the comment section are saying this is not good.) It also has carrageenan as a thickening agent. Looks like that even has controversy... Ok, thanks to the comment section I was happy till they told me to red the ingredients. Ok, everything in moderation cause I am too lazy to make it myself.

I seriously appreciate this recipe! I was battling a cold for two weeks and went through an entire jar of store-bought honey citron tea only to realize all the added sugar it had. I found your video and made my own. I'm going to make more and give them as gifts!

Yuja( Korean lemon) is the hybrid flavor of tangerine + lemon. It's tough to grow unless you have green house nurseries.

Thanks, Dan, for this video! I LOVE citron tea, but most commercial brands are mostly made with fructose, rather than honey. One can also leave the honey out in the sun to loosen it up and protect the natural properties, if using pure, raw honey.

You're welcome! I am glad that you like it. I find the commercial products a little too sweet also. That is a good idea to leave the honey out in the sun. My mother-in-law heats the honey in a hot water bath. I probably should have shown it that way instead of using the microwave.

Could you please make a video about the microbudding technique? Dr. Mani Skaria says it takes only 4 to 5 months after seeding until the citrus can be planted in the field, and will produce fruit in only 2 years. This sounds very intriguing. I'd like to hear what you have to say about how to microbud, why it speeds up processes, and how it differs from regular budding propagation techniques. Thank you for your videos FruitMentor

Thank you for the suggestion! I have done chip budding on very small diameter rootstocks and I have seen this in a citrus production nursery. This is a good idea for a video.

I think microbudding is a bit of a misnomer and I avoided the term in my video. I think it refers to chip budding to a small diameter rootstock. Chip budding while the tree is small improves production efficiency and allows more trees to be propagated in less space. This is important because nurseries now have to propagate and grow trees inside of insect proof structures due to the Asian citrus psyllid. A couple of Korean brands I’ve noticed don’t use ANY honey at all! I think this is really misleading to the consumer, and they shouldn’t be allowed to label it as HONEY, lemon and ginger tea when there is no trace of honey in it, or tea for that matter.

I love the drink. My biggest problem is that a jar of it costs 35$can and last me only a month. Second, you can’t grow lemons with 1meter of snow covering the tree for half the year! So I think I will try my own recipe... I was thinking a mix of kumquats and Meyer lemons, and maybe simmer in part or completely to change the texture. Maybe also try different sweeteners: cassonade, white sugar, violet sugar, white corn syrup, different honeys, maple sugar or syrup... and mixes of those.

Where do you live that it is so expensive and that you have so much snow? The recipe is also good with lemons. I have not tried kumquats.

@@arnaudmenard5114 I can imagine that it would be hard to grow lemons there! If you wanted to try to grow citrus, Yuzu would be a good one to try, but you would have to give it some serious protetion or grow it inside. I used to work for RIM (BlackBerry) and made many trips to Ottawa. One of my friends there took me ice skating on one of the rivers there. It was so much fun, but very cold.

I think the most snow I have seen was is 2008... about 2meters and a bit. I literally made myself a burrow in my front-yard. Plums, service-berry’s and apples grow wild around here, so those are easy to get.

Thank you! Where do you live? You must have yuzu trees are available there. Yuzu trees are relatively new in the U.S. despite much immigration from Korea and Japan, so I did not make an assumption that they are widely available in other parts of the world where I do not know. It sounds like we may be behind the times and that I should have done more research into other countries.

I'm up here in Canada but have only been growing Yuzu for a couple of years now. It's pretty much the only citrus that I don't have to grow in a container. I think my favorite Yuzu foodstuff is a Yuzu meringue pie :) Thanks again for your videos :)

@@davidh2029 I am trying to grow Yuzu and Lime in the Rhondda Valleys, South Wales (UK) I know it is a tall order, but I have to try. Due to the relentless storms and ice, I have mine in an 'unheated' greenhouse, but I do add candles, numerous candles to raise the temperature as required. The other day, outside temp. was -5, 12.6 in the greenhouse, so the method does work. I was interested to see that you grow your Yuzu outdoors, mine seems to show its frustration with our area more than the lime does, despite its advertised superior tolerance. The lime is flourishing, covered in blooms, the yuzu less impressed. I hope they both toughen up with each year, this is their first autumn/ winter here. Fingers crossed, but well done growing them in Canada, I'm impressed!

@@davidh2029 ...and it works! We have our own unique ways of achieving the impossible! A determined bunch we are, us exotic growers. I have 5 mangos germinating, luckily they are on the safe indoor windowsill - heated by a radiator. Don't know how I will get away with that when they grow! (Cross that bridge when I come to it : )) Take care and good luck!

Try it with lemon. Obviously it is not quite the same, but this recipe with lemon also makes a nice drink. Many Koreans also make this recipe with lemon.

I would say it is more like a lemon, but still the flavor is different and unique. You have to try it to understand. I am not sure if it would be good with mandarins or oranges. If you try it, I would be interested to hear how it turns out. I have had it with lemons and it is good with lemons.

Roughly, how much honey do you think you’re adding per each batch? (I don’t want to waste precious honey by adding to much but don’t want to skimp on the recipe by adding too little) Do you have a ball park amount?

I think the overall amount ended up being about 1/3 honey and 2/3 fruit. I was not measuring, though.

This is also good with lemons substituted for the yuzu fruit. I am not sure if it would be good with oranges or tangerines. It might be too sweet, but perhaps it would be interesting to try it.

I just returned from Seoul two days ago and am so jet lagged 😎 So I start thinking of the things I wish I knew how to make and the fruit teas were soo good! One place served this with a sprig of rosemary added. It was a nice touch. Now if I could make jeju orange juice! No kidding the 7-11 sold pouches of that and the jeju oranges only harvested in November if I remember correctly. Very refreshing drinks Great video! Thank you.

It is personal preference, but I prefer a honey that doesn’t have too strong a flavor. I think some honeys have such a strong flavor that they would detract from the Yuja flavor.

The only place that I have seen this fruit for sale is in the Santa Monica farmers market in Los Angeles, California. I have also seen fruit labeled Yuzu for sale at some Japanese grocery stores in the San Francisco bay area, but I suspect that those fruit are really another citrus variety called Sudachi and mislabeled as Yuzu.

You might try adding some sugar. I have seen commercial products like this made with grapefruit, but they are a bit bitter for my taste. I would expect fruits like Yuzu and Lemon to work well with only honey.

Yes. You can buy a Yuzu tree and grow it. Even if you live outside of a citrus growing region it may be possible because Yuzu is so cold tolerant. I have heard of people even growing it in Canada!

It may be hard to find the fruit in Australia. If you can find a Japanese grocery during citrus season, that may be a possibility. If you can't find them, you can always plant your own tree.

I’m not sure if this recipe would be safe for canning or not. When we make it like this we immediately refrigerate it and then drink it without waiting too long.

Te aconsejo que lo pruebes con limones de Murcia (España) , no esa castaña de limon americano , y de paso si a mi me dan un limon como el vuestro , me agarro un rebote , si estàn secos no valen una castaña pilonga . ¡ Viva el limòn Murciano !, de verdad que estais todos acatarrados .....

I don't think it would be good if you used citron fruit, but I have not tried it. The citrons that I have tasted were too bitter. If you want to try it with citron, I suggest that you use sugar so that you do not waste the honey in case it turns out bad. If you do not have yuzu fruit, you could try it with lemon which is good.

I doubt kaffir line would be good with this recipe, but I bet you can figure out something that will be good by experimenting. I bet you have some great Indian citrus varieties that I don’t know about.

It is also good with lemon. I know that some people make it with yuja and ginger. I have not had it with lemon and ginger, but I imagine that might be good!
