I guess it's because of the oil's temperature... first they fry it at high heat to get the crispy exterior, and then they move it to another oil with lower temperature so it cooks inside

To make chicken crispy first remove chicken from hot oil. Give it a little rest and then fry it in high temperature oil. Crunchy chicken is ready. As you can see they mix chicken in sweet sauce in the end. Which makes the chicken soggy. To avoid that they make chicken extra crunchy by double frying them.

They feed the leftovers to chickens in an attempt to make the live ones grow more arms and legs. They're hoping to develop a 'centipede-chicken', the size of an ostrich, which will make absolute fortunes.

I say they only fix a certain amount by knowing how many customers they normally have and wait until they are low to fix more that way they’re not wasting food

I dont know how they season theirs, but making the batter out of cornstarch would make it crispy like the Korean fried chicken

Thai chicken uses rice flour. Or at least that is how I learned it from Thai chicken cooking channels and recipes. Some use wheat flour. Rice flour is more of the thin crispy skin with less oil and grease.

Yummy, double frying with rice flour/cornstarch flour for crispiness and less oily taste + non-wheat flours are healthier. I'm sure it's all cooked in peanut oil too, which is expensive.
