China's seasonings are literally all the asian countries combined. Since China is a huge country, every state/province/region you go are extremely different. Fish sauce is used mostly in Fuzhou where it is used to season foods/soups. Lots of fujianese dishes are similar to Vietnamese food.

I once taught a lady to swim and get over her fear of swimming (water in general) after her brother drowned in front of her as a child.
