It never crossed my mind to use eggs instead of seaweed for rolls. I really don't like the texture of seaweed for Sushi so have hated it every time I've tried it but now I'm gonna have to make it like how you did.

Yes any pickled vegetables will work. If you have access to it, they do sell what they call Baek Kimchi (white kimchi) where it’s not spicy. Hope that helps

I actually made these rice balls for dinner last night and packed them for lunch today for us. Used chicken sausage instead of spam and served some pickled sunomono cucumbers I made on the side.
