Well, how about introducing Sharif to one of my absolute favorite dishes in Korea?
그럼, Sharif에게 제가 한국에서 가장 좋아하는 음식 중 하나를 소개해 주는 것으로 시작하는 건 어떨까요?

something entirely unheard of in our home country.
제 고향에서는 전혀 볼 수 없는 음식이에요.

But I wanted to find a truly special place for Sharif's first experience

그래서 한 시간 정도 걸어서 덕유산까지 올라갔어요.

대전에서 옥천 가는 길에 방아실이라는 곳이 있는데 90년 대 중반에 그곳에서 송어 비빔회를 맛있게 먹었던 기억이 나네요. 콩가루 쌀작 뿌려 갖은 채소와 비벼 먹었던 기억이 입안에 침이 고이게 합니다.

예전에 양식 캐나다산 송어로 회, 튀김 처음 먹어본 기억이 나네요. 그때는 흰살 이였는데, 이후로 연어와 교배했는지? 어종이 바뀐건지 색이 오렌지 색으로 되었더군요..마치 이스라엘 향어가 바뀌 듯이...

원래 송어살은 흰색입니다 플랑크톤의 아사산틴 성분을 섭취하게 되면 붉게 살색이 바뀌는데 양식하게 되면 아사산틴 성분이 함유된 사료를 먹이기 때문에 붉게 바뀌는겁니다. 그점은 연어도 마찬가지입니다 자연산연어는 시중에 파는 양식 연어에 비해 색이 아주 옅습니다

송어회 좋죠! 30년 전쯤... 대학교 방학때 인제 내린천과 평창 기화천, 지금은 관광지가 되어버린 삼척 신기 환선굴앞 계곡 등을 찾아다니며 송어낚시를 즐겼던 기억이 나내요. 물론 이런 곳에서 잡은 무지개송어들은 대부분 양식장에서 흘러나오거나 방류된 것들이 자연에서 성장한 것들이였죠. 그러고보니 이제는 계곡에서 송어낚시를 즐길만한 곳도 많이 줄어둘었내요.
