Dirty Bird is by far the best rub in the world for poultry, fish and pork. Can put that stuff on anything. Try it on deviled eggs. Life changing

We did the spatchcock method last year with the brine and did it very similar to what you've done here. The only major difference is that we injected some of the left over brine fluids about 15-20 minutes prior to throwing into the PitBoss(I also use duck fat as my binder to hold the Dirty Bird in place. 14lbs took us exactly 3 hours and yes we tented it at 2 and splashed butter on the skin twice before removing. Best Turkey ever, and so easy to prep and cook for both the guys like me that's been doing the oven baked turkey different ways for over 25 year down to the new guy trying to figure it out.

You’re about a day late I just attempted to smoke spatchcocked turkey in your turkey bine. It turned out well but I wished I would’ve known about the spray butter…lol. I used duck fat as my binder 😉

When I cook mine its hot dirty bird and peach habanero. I melt butter and brush on, skin is crispy and inside is juicy. Been cooking like that for years.

I did my first ever brine on a turkey last year. I was just like salt and sugar and real basic. Game changer. This year I'm gonna buy one of these brine bags. Spatchcocked turkey that's smoked and has been brined is way better than fried turkey.

I know the video mentions the suggested smoking temperature (275 degrees), but nowhere in the printed recipe does it say this. It just says "Heat the grill and prepare for smoking". And there's no mention of of the brine bag, mayo as a binder, or about using spray butter. Also, is there a suggested temperature for the thigh/dark meat? Otherwise, this sounds like a simple, yet tasty recipe.
@KosmosQ
@KosmosQ Жыл бұрын
We'll get that updated 👊🏼💥 Typically, I just go off the suggested temps for all parts

I am cooking the turkey for my family this year. But then need to make an hour drive. What’s the best way to keep it warm and moist on the drive and while everything gets ready. Can you just treat it like a brisket?

Really like DB rub. I’ll have to try the turkey brine. I like & use the Pork brine. Could it be used with turkey ??? Question though. Why no DB rub under the skin on the meat?? & What about glazing with the rib glaze the last 30 minutes of the cook?? 155-158 with rest always works for a moist bird for me. Suck it FDA😂Thanks Kosmo!!
@KosmosQ

You could use it on a turkey and if you do, let us know how it turns out! Just didn't put any under the skin on this one, but have before and it's legit

Pull out the Breast Bone from underneath, it’s much easier. Go underneath the skin, separate from meat, rub with Duke’s Mayo, season the meat, pull skin back and pin with toothpicks. Then Duke’s Mayo & seasoning on the outside.
