I love the Catalan as well. I am still trying to understand plans in more depth after starting it during the pandemic. I usually end up with nice to great positions!

Is there an old chess book you would recommend that dives into these opening along with notation for games played by the masters and the theory?

I think he collected these from book 1.d4 (2nd phase - Bogoindian , Nimzoindian, Catalan, special sidelines) by Slobodan Mirkovic, all of these games can be found there. Fabolous master game examples, with lots of comments. Not that much theory. For theory Bologan: The Powerful Catalan book is really good in my opinion, or Nigel Davies: Play the Catalan. Both very accurate well analyzed theoretical books.
