Looks yummy, but that dish is more like what they call an "Enchurito." Half enchilada ingredients on the inside, held by a flour tortilla rolled up like a burrito on the outside. Its like the Enchilada and Burrito had a kid. 😅 🌯 🌶🧀

I like the red enchilada sauce but the green is my favorite. Those enchiladas looked good. I know a couple of Latino cooks and they sometimes use flour tortillas and still call them enchiladas.

Very nice...my hubby and I did that . We fed and still do take care of the poor strays that heartless people throw out like trash. Broke our hearts. Unfortunately we could not catch them all. To this day we still try and keep putting water and food out. Got some cat condoms from chewy and keep putting fresh straw in them. Winter we cover them with tarps..Sorry we are no one special But just felt the need to say SPAY AND NEUTER PLEASE..NO Creature should suffer.....man or beast...thank you to all that do care.. I thought the same thing, supreme burritos. I make mine with corn tortillas. Flour is usually burritos and flautas. Corn is usually enchiladas and taquitos. 😊

I eat Mexican food all the time in AZ. The enchiladas are in flour tortillas. Enchiladas are baked. Burritos are fried or neither baked or fried. At least that's how it's done here. 😊

So much better if you use corn tortillas,flour is not the preferred tortilla for enchiladas. In a pinch you could even layer corn tortilla strips with flat corn tortillas, green chilies, green chili sauce, sour cream and cheese and make it a casserole. Try it you’ll like it.

Totally agree. Flour tortillas turn to mush. Also notice that Kristen puts ALL the filling in the middle. Than again whenever she cooks everything is in the middle and ingredients are really sparse around the edges.

I know this comment is really old, but this type of "enchilada" isn't traditional. It's a SouthWest creation that calls for flour tortillas. And while it is mushy, it's still good. I think the only "enchilada" thing about it is that it sort of looks like a traditional enchilada. Taste-wise, it's something else entirely.
