Curd rice, also known as "thayir sadam" in South India, is a traditional dish made from cooked rice that's mixed with yogurt and seasoned with a variety of flavourful spices.
In this recipe, I'll be using cooked white rice, freshly made yogurt, and a delicious blend of mustard seeds, urad dal, curry leaves, and other aromatic spices to create a dish that's both tangy and savoury.

Curd Rice

Prep time - 15 mins
Cooking time - 5 mins
(Serves - 4)
Ingredients:
Rice, boiled (चावल) - 2 cups
Curd (दही)- 1½ cups
Ginger, chopped (अदरक)- 1½ tbsp
Green Chill, chopped (हरी मिर्च) - 2 nos
Carrot, grated (गाजर) - ½ cup
Ghee (घी) - 2 tbsp
Dry red chilli (सूखी लाल मिर्च) - 2-3 nos
Mustard seeds (सरसों दाना) - 2 tsp
Urad dal (उड़द दल)- 2 tsp
Asafoetida (हींग) - ¼ tsp
Curry leaves (कड़ी पत्ता) - handful
Milk (दूध) - a dash
Salt (नमक) - to taste
Coriander, chopped (ताज़ा धनिया) - handful
Method:
- Curd Rice is a simple and uncomplicated recipe from South India, which is simply curd, rice and tempering. Let’s begin with rice. Usually ponni rice is used for curd rice, so take some boiled rice in a flat bowl, and add some curd. Chop ginger, chop some green chillies, and add them to the rice and curd. Now add some grated carrots.
- Now for tempering, in a hot pan, add some ghee, dried red chillies, mustard seeds, urad dal( to give it a bite and the nutty flavour enhances the taste), heeng, and “the star ingredient”; curry leaves. Cool the tempering a little, then add it to the rice.
- Now, let’s get your hands dirty! Mash it well with your hand. You can add a little milk also if you want. Mix it properly.
- Serve it with some pickle and appalam and enjoy this light to your tummy, Curd Rice!

After I finished my BHM in 2002 I started working in a 4-star Hotel in Cochin in F&B Service. For every Banquet function and Buffet Lunch, the restaurant would have Curd rice & Pickles as the centerpiece. I have never bothered to taste it. But when Chef Kunal Kapoor was making it my mouth was literally drooling and brought back a lot of memories. Thank You, chef. Will definitely make it either tomorrow or the day after.

It is called Daddojanam in Telugu states. In many temples it is also served as Prashad. But many like to eat it when they want to cook and eat something fast and also to cool our stomach. We also add Chana dal and 5 or 6 peppercorns in tadka.

Hi Kunal Sir I am a big fan of yours just a suggestion Coconut oil is the best for tadka To keep it light on the tummy. Ghee goes best with coconut rice to enhance sweetness of the cashew and coconut Also a pinch of asafetida in the tadka makes it taste very good give an earthy and a little sour punch to the curd if you are using fresh non sour curd Traditionally this is a common man’s food so sundried curd chili or mor milagai is the classic combination 🙏🏻😊

It’s called mosaranna in Karnataka. Mosaru meaning curds and Anna is rice. Very very cooling recipe for this summers. Also light meal for dinner especially when the lunch is heavy. In our house, we all love to eat anytime. In Brahmins, eating curd rice indicates end of the meal and compulsory. Also we believe that it’s good for digestion.

As long as it is not causing any hatred against others , let her share her culture and you can add to hers saying it’s done everywhere . I see people demonising Brahmins in a fashionable manner and not enough voices opposing it . Let’s stop this practice of demeaning ANY caste or community.

@@YinYanUzumaki you north Indian need not speak for a South Indian dishe, it's culture and communities. I'm also from Karnataka... so I can speak here in reply.. Here everyone, people of all castes, communities, social classes and regions eat curd rice/ buttermilk rice. not just the Brahmins.

Isn't her comment claiming the reason behind consumption of curdrice limited to only Brahmins and indirectly saying all others of other communities are fools who eat curd rice have no idea why it's eaten or when should be eaten. . Please... the food practice is the same for everyone.. eating curd rice does the same to everyone not just Brahmins. Such ignorance. God knows in which era they're still living in.

All time favorite. While traveling my mom used to make curd rice by mixing the rice only with milk and adding very little curd so that the rice becomes perfect not gets the right texture & taste & does not get sour. So nice I got my childhood memory. Awesome. Thanks a lot.

Kunal , if you add few pomagranate it looks colourful and tasty.Further we add preserved green chilli fried in oil.( green chilles are slightly slit at the end and soaked in thick curd and salt and sun dried alternatively soaking and sun drying until chillies obsorb all rhe curd.When fully dried we can store for months together).we call it mor milagai in tamil nadu.cut these pieces, fry and add to this curd rice.

This dish remind me while traveling from Bangalore 2 Delhi by train. The menu offered a wide range of south- Indian meal one of the succulent dish was curd-rice which my taste n my digestive system too.served with lemon pickles 2 mop up the deliciously curd-rice. In summer, we add finely grated juicy cucumbers too for the additional cooling that it gives to our body. Thair Sadam tastes amazing with the fried Thair Mulagai (yummylicious).. i.e. chillies soaked in salted curd and sun-dried.. My best comfort food.. anytime❤

Oh no this reminds me of my sister.when we were kids our helper used to come to all our schools in the afternoon with basket for each of us Hot meals . A tiffin a napkin a plate a forke spoon and knife and waterbottle ofcourse. .There would be chicken fried rice fried fish or byraini or chapati,or porota etc Now my sisters friends would bring curd rice,tamarind rice lime rice etc .We never get to see them being prepared at home .So she would exchange her tiffin with them.All fine then , ,but the moment she would come home in the evening her throat would start irritating .She used to get sore throat very often .She had tonsillitis. My mom used to wonder how she was falling sick so often .she slowly started investigating amoung her friends and found out that she was exchanging her tiffin. Now my mom instructed my helper Velayudhan to keep a watch on what she was doing .She also send another extra tiffin for her friend .This was how she used to fall sick in Chennai. Fed up of her game my dad sent her off to the hostel in ooty.under strict control. That was a great reminder. I too love curd rice

I went to Mysore for my one-month internship I had curd rice there, the taste still lingers in my mouth and is still my go to if my mother isn't home, and I am in no mood to cook.

*रात को पके हुए चावल को रूम टेंपरेचर पर आने दें. उसमें फिर होल क्रीम मिल्क डाल कर चलाएं. दूध इतना डाले कि चावल उसमें पूरी तरह से डूब जाएं. अब इसमें आवश्यकतानुसार (क्वांटिटी के प्रमाण में) जामन के लिए चम्मच भर दही डालें. याद रहे दही बिलकुल भी खट्टा नहीं हो. दही डाल कर बड़े से चम्मच से खूब चलाएं. यदि मौसम गर्मी का है तो इसे फ्रिज में रखे. सर्दियों में बाहर रख सकते हैं. सुबह सुबह फ्रिज से निकाल कर बाहर रखें एक बार फिर से चलाएं. चार या ोांच घंटों में पके हुए चावल के साथ ही दही जमेगा. अब इच्छानुसार उसपर तड़का लगाएं. ताज़ा नारियल के छोटे छोटे टुकड़े और एकाध घंटा भिगोए काजू के टुकड़े भी अद्रक के साथ डाल सकते हैं. दूसरा तरीक़ा ये है, रात को पके हुए चावल को रूम टेंपरेचर पर आने दें. चावल ऐसे बर्तन में पकाएं कि चावल पकने के बात आधा बर्तन खाली रहे. अब चावल के ऊपर का पूरा बर्तन सादे पानी से भर दें. उसे ढँक कर रखें. कम से कम 6 से 8 घंटों तक पके हुए चावल पानी के नीचे रहने चाहिए. बाद में पूरा पानी निकाल कर उसमें ताज़ा दही मिलाए और फिर बाकी तड़के का प्रोसीजर सेम. हरिॐ.*

We also put grated ginger in tadka and not directly. Also slight sugar to be added. Optional to add kaccha mango in tadka. Some add pomegranate to enhance the looks.
