1/2 cup oil 1 sliced red onion Saute until light golden. Add water. Cover for 2 mins to soften. Add 2 tomatoes finely diced. Add 4 stems finely diced green onions (hara lehsun). Leave lid off and let masala cook. 1 tsp salt. Lal mirch. 1/2 tsp haldi. 4 sabz mirchein sliced (you can reduce) Stir Add 500 g peas. Add 500 g potatoes. Bhoon with masala. Add 2 handfuls methi approx 250 g. Add 500 g carrots, sliced. Don't slice very thin. Close pressure cooker. After 1 whistle of pressure cooker, keep it closed for 2 minutes more max. Open and sprinkle handful dhaniya.
