The humor makes for an entertaining vid, but has another purpose. It's easy to forget details. When Kurt throws in a few jokes on technique it sticks out in your head. It's a teaching method to keep your brain actively involved. It works surprisingly well. When you need to stop and think for a second during a roll a Kurt joke will pop into your head, you remember what you need to do, and you have a bit more positive energy due to laughing in your head.

If a higher belt is really owning you then they should be showing you something as well. Let's say you roll for 5 min. and in the first 3 min. they have successfully tapped you once or twice, ask them to spend the last 2 min. giving you pointers. The point is to learn and they got theirs already so no reason they shouldn't be helpful. Most people are.

Not usually. Depends on how you train, but they aren't used in competition or street fights so best not to be dependent on them. Both should be aware to protect themselves and their partner, but accidents can happen.
