Mango Graham de Leche
This two Filipino delicious desserts are the best combination. They say the dessert was created because there was this one person who sells leche flan and they have so many leftovers from holidays so they've decided to repurpose it. They put the leche flan over the Mango Graham float and surprisingly it was a hit. That's how the Graham de Leche was born.
This recipe is so easy you just need to cook the leche flan and then assemble the mango graham on top of it. Place it in the chiller overnight and unmold the day after.
Leche flan:
10 egg yolks
2 whole eggs
1 1/2 cups evaporated milk
300ml condensed milk
1/4 cup white sugar
Graham layer:
500ml all purpose cream, chilled overnight
300ml condensed milk, chilled overnight
1kg sweet mangoes, diced
200g graham crackers
2 tbsp gelatin, clear & unflavored(soak in 1/4 cup water)
3-4 tbsp hot water
