I have a big bag of it stored in veg drawer of my fridge. I assume that is safe. Years ago I gave popcorn gift boxes for Christmas and turned out it was old and had bugs. I was SO embarrassed! Maybe I should go ahead and vacuum seal it?

Glad I listened. I have always stored my unpopped popcorn in the freezer.just finished some that I had in the freezer for 6+ years. It tasted great!

I’m often uneasy about how stable my stores are. Any deep dive on food safety and storage is always much appreciated ❤ there would be nothing worse than in a time of need finding that you have handled your preps improperly and your emergency rations are inedible 😱. I would love to hear more about aflatoxins in dry goods; especially corn and peanut products.

Aflatoxins are produced by a type of mold called Aspergillus flavus, which is commonly found in peanuts and peanut products. They are extremely toxic, so if you suspect any mold growth in a peanut product, trash it immediately. Again, aflatoxin is extremely dangerous. In order to grow, Aspergillus flavus requires a water activity of 0.78 or higher. In order to be produced, aflatoxin requires a water activity of 0.83 or higher. Since I'm retired, I no longer have a water activity meter for testing the water activity of products. Sorry. I am not an expert on this topic, but I have not heard of Aspergillus flavus growing in corn products. Please be careful and always insure that any equipment touching the product is clean and dry. Also, please remember, "When in doubt, throw it out."

This was very helpful for us! I did put away some popcorn, it was only four years old, and I decided to rotate it. We opened it up and it was totally rancid. We didn't put an oxygen absorber in it, because I thought they'd be safe enough without it (but to the protection of the hull), but that didn't work out for us after just a few yrs. I'm not sure we used containers with good seals, just reused old mayo jars. I'm going to try this again because we love popcorn, and like Joe said, even if it doesn't pop it can still be ground and we do love our polenta!!

If you put a cup of water in the Mico for one minute take it out and pop the popcorn you get better results. This may work for stored popcorn also.

While you two definitely have a broad knowledge of all things prepper, I do enjoy the grassroots discussions of your expert guests. With popcorn being the most consumed comfort food in my house, this one hit it out of the park for me and answered all of the questions I had about the longterm storage of popcorn. I am a firm believer in safely storing foods so i stay to the rules! But with that being said I would love to hear his thoughts on rebel canning! I only use tested canning recipes but there are so many recipies out there that are not tested even though they have been home canned and consumed for many years without getting sick! So hearing the science behind it would be great! Thank you for all you do for the popping community!!

But curiosity killed the cat you know lol and then I can tell my family that wants to do the dumb stuff like my brother said to me so if it don't seal after the canning process you can vacuum seal it I said no that isn't safe and yes he argued with me for 2 days on that lol finally I said you do you and I will do it right lol

Other questions: Is it safe to store hulled (not pearled) barley with an Oxygen absorber, and, is it safe to store shelled nuts (such as peanuts, walnuts, pecans, almonds, etc.) with an Oxygen absorber?

I know nuts become rancid because of the oils. I store mine in the fridge but haven't tried long term storage

I store hulled barley just like my other grains - mylar bags with oxygen absorber, then put the mylar bags into a bucket or container strong enough to keep mice from getting to them. I am allergic to nuts, so don't store those, but I keep a lot of seeds (pumpkin and sunflower mostely) and store those in glass canning jars with the double protection of an oxygen absorber and also vacuum sealing... I have some I just opened to do holiday baking that were 3 years old and very fresh (none rancid). Hope that helps!

Sorry, but such a chart would be technically impossible to reliably produce, because shelf life depends on several uncontrolled variables, such as packaging type, seal type, processing variables, product water activity, product moisture content, storage conditions, etc.

I have the same... I don't open them just for the purpose of repackaging, but if I have occasion to open one of the #10 cans and do not use the entire contents, I put the leftover product in a glass canning jar and vacuum seal, OR in a mylar bag with an oxygen absorber, then place the sealed mylar bags into a bucket or container with a tight lid to keep rodents from getting to them (they WILL eat through mylar!)

My grandmother (90s) taught me that you can take old popcorn that wouldn't poo and soak in hot water for a day or so, and it would pop.

I've used popcorn for grinding our cornmeal for many years. To those who are asking about using it in a recipe... from scratch cornbread requires baking powder and a pinch of soda if using buttermilk or sourcream. Most recipes call for equal amounts of cornmeal and flour; ratio 1 to 1. Test recipes and write down which you like best. Jiffy mix has sugar in it. You would need to add sugar to achieve a similar taste. I don't use sugar in cornbread. Remember, fresh ground cornmeal is not a cornmeal mix, such as is sold in stores. Mixes are prepared as selfrising options. Experiment to get the results you desire.

​@kj7653 Jiffy is a mix. Cornmeal is plain. This is my cornmeal recipe... for sweet cornmeal bread, add sugar. I don't know how much it needs. Add 1 beaten egg to 2 cups buttermilk, stir well Dry mix- 1 cup cornmeal 1 cup plain flour 3 teaspoons of baking powder. ½ to ¾ teaspoon baking soda About ¾ to 1 teaspoon salt. Mix dry ingredients well. Add wet ingredients and mix well. After mixing, add 3 Tablespoons of oil/melted butter/bacon grease (your choice) mix well. Pour batter into hot skillet that has about 1 TBSP òf melted oil of choice. Bake at 450° for 18-25 de pending on size of skillet. Larger skillets require less time because batter spreads out thinner. Insert knife in center, it will come out clean if bread is done. For less crispy crust, do not preheat skillet. Whole grains sometimes vary in absorption. You may need extra liquid or extra meat for desired texture, dryer verses more moist. Batter should be thinner than homemade muffin mixes. But, thicker than pancakes.

This was very useful! PLEASE HELP….I bought store bought cans of food. I have an outdoor uninsulated shed in snow winter climate. Some have been in freezing conditions. Are they safe to eat? Would botulism be of concern? Any suggestions for keeping it warm in winter?

Yes, some were swollen, a few were rusty. They haven’t been out there that long. Only 1 winter and they are not expired. I threw out the damaged cans but am wondering about the other ones. Also, I have mylar bags of rice. Not sure if they are ok

Joseph touched on this breifly at the beginning, but the major takeaway from this discussion is 'water availablity'. Just because something is "wet", does not mean it harbor and grow pathogens. Take sugar sweetened jams for instance. Many people store open (non-sterile) jars in their pantry for weeks and the only problem I read about is mold - which is a plant and entirely different from bacteria. Most of the water is bonded to sugar molecules and not available to anyone else. When a bacteria (or any cell) lands on the jam, it attempts to establish an equilibrium with it's host environment. The "goo" inside the cell is not nearly as sweet as the "outside" and can't equalize with the sea of sweet around it. The jam literally sucks all of the moisture out of the cell and it dies. Dried fruits are another example. They are clearly moist, but all the water is tied up doing other jobs.

I bought 50 lbs organic monster circus corn for about $2 lb delivered but seriously, it will take YEARS to use it for me and hubby. I thought to gift it to friends but it needs special directions to pop that size well so it is unsatisfying in complications for folks! lol More for us!! But I also intended to grind it for corn meal and it has been fun learning to make southern style corn bread with it in the Air fryer! Used the Nutribullet to grind it: rough blade then the fine blade and sieve. Will get the grain mill out now that I see it works. Great buy and my storage looks like yours! Lots of PET bottles in a dark cool closet...

When nuts or oils go rancid, can you always smell it? Does it make you sick or just put you at a higher risk for cancer or something if you eat rancid oil?

You can't miss a rancid smell. It is like paint thinner ... sort of. You will absolutely know and you will not want to eat it.

I don't use amaranth grain but if it is high in fat you probably don't want to store it in mylar with an oxygen absorber because it could go rancid. I store a 2 years supply of whole grain rice which is high in fat and which I use in place of wheat because I am gluten intolerant. I store both brown and black rice in our living space which is 75 degrees year round. The brown rice I store in the plastic bags that I purchase them in and the black rice which I buy in bulk, I repackage into quart size ziplock bags and label with the purchase date. The plastic bags are stored in cardboard boxes to protect them from light. It is important to keep food storage rotated and I found bags harder to rotate than cans until I created my current rotation system for them. I have 4 boxes that are large enough that 3 of them hold a 2 year supply of brown rice and I have them numbered 1 through 4 and sitting adjacent on the same shelf. I use from box 1 and refill the empty box 4 as I replace rice. When box 1 is empty and box 4 is full, box 1 is relabeled as box 4, box 2 becomes box 1 etc. I store a smaller quantity of black rice and have just 2 boxes for it but the procedure is the same. When I grind the rice into flour to make bread, I grind small amounts at a time and store it in airtight containers in my freezer. Hope the helps

Edible? ... 25 years. How long will it still pop ... maybe 10? ... maybe 15? It all depends on storage conditions. The cooler the temperature the longer the shelf life. How is that for getting specific :)

I dehydrate (not freeze dry) things, various fruits, and vegetables. I have no idea what the actual moisture content of the dehydrated product is. I store the dehydrated things in canning jars clean and dry. I do not use anything to vacuum the air out or the oxygen. I'm concerned about botulism if there's enough moisture remaining and reduced oxygen. Could botulism be a danger? Generally, I use things with a year or a year and a half. How long do dehydrated vegetables and fruit usually last?

I stored sprouted dry oats in mylar with an oxygen absorber. I would like to know the scientists opinion on this. I have read conflicting opinions on storing sprouted grains with O2 absorbers.

Someone else asked about dent corn... Along the same line... What about masa for long term storage with oxygen absorbers?

It's easy to remove oxygen (and by the processes moisture) from the popcorn... but "it might not pop". If we take popcorn OUT f long term storage, might it be a good idea to leave it out at room temperature and humidity for 24 hours, to re-absorb a little moisture? Or (considering the pinhole observation) steam the grains for a few minutes in an Asian bamboo steamer, or even in the pressure cooker at low temp?

What about simply storing popcorn in the original jar, as is, from the store? They are vacuum sealed?

I do that a lot. They are probably nitrogen flushed but I'm not sure. They do something to ensure a longer shelf life.

I want to know about storing pasta because I vacuum seal mine but just read an article that said it’s 12% moisture??? Please reply!! I’ve asked lots of questions & seen no answers

Hello Jan! No worries! You can find a close proximation of moisture content here fdc.nal.usda.gov/fdc-app.html#/food-details/169736/nutrients. This one says dry pasta 9.9% water. Varieties vary but dry pasta falls in the safe window for long term storage in a reduced oxygen environment. 10% is the ideal but frequently you will have grains that may be a little above that. You got this :)

I have packages of popcorn seeds to grow popcorn, but I never thought about saving popcorn for popping. Be safe my friends.

So far I am only halfway through this video, but I read Popcorn kernels cannot be seeded. I am going to google it again, but I remember thinking that was very strange. I think you and I had better check before we count on it for planting. Hugs!

When I was a kid I planted some popcorn it came up but then I had to move so I don't know if it produced remember how things have been changed not to reproduce such as hybrid seeds you need heirloom seeds

How to store, long term: chocolate chips, marshmallows, grits, cocoa powder, powdered sugar, corn meal, rice, spices, stevia, lard, shortening? I’m confused as to whether use vacuum seal or oxygen absorbers or neither for these items. PLEASE HELP. I HAVE ALREADY SEALED MY CORN TWO DAYS AGO AND TODAY I WAS TOLD IT WOULD CAUSE BOTULISM. Now I’m second guessing all my stored items. PLEASE HELP ME QUICKLY. THANK YOU.

Take a look at this site to help you understand the moisture content of foods fdc.nal.usda.gov/fdc-app.html#/food-details/169697/nutrients Popcorn has about the highest moisture content of commercially sold dry corns and according to food scientist, Joseph Bell, it is safe. The goal for long term storage is 10 percent moisture or less.

I've never stored popcorn for more than a couple of weeks. If I need more, I'll go get more. But I really don't need any more!

To make your dry popcorn 🍿 more bioavailable don’t forget to nixtamalization process 🤓 before grounding it.

Thank you. I don't have oxygen absorbers in mine now. According to a previous video 🤣🤣🤣So I am gonna go through that. I will start adding oxygen absorbers from now on.

How about putting in some dry nitrogen in the container? Nothing can live in dry nitrogen.

Weevils is the big popcorn risk. Freeze the kernels for a few days before you add it to your bag with the oxygen absorber.
