Shampa's Kitchen In my opinion Ilish maach bhate in kolapata or tiffin carrier with only mustard paste and lots of mustard oil, made inside the rice handi is the ultimate Ilish dish. Anyone who has had it never forgets it, esp non-Bengali friends and relatives. But they find that much mustard oil difficult. Have to tame it a bit to serve them. Same with Chingri bhate.

I made it first time today in U.S . We don't get banana leaves here , however we do grow plenty of Lauki in our backyard. I did try your recipe . It turned out so yummy and delicious. I added yogurt without water and coconut cream . I did fry in medium heat covered 5 mins on each side and it is all cooked perfectly. The fish turned out buttery and soft. I end up eating the Lauki leaves but you can't do that with banana leaves. I started liking paturi better than VAPA Hilsha. I don't know how am I going to cook paturi during winter. For Probashi Bengalees : Those who buy frozen Hilsha these instruction is only for them to get good results. I usually get Hilsha fish cut into steak pieces frozen from Deshi stores. I thaw only the pieces I am going to cook. That way they stay fresh in the freezer for a month. After thawing I put in salt water in the refrigerator for an hour. Later I mix half tsp sugar to mellow down saltiness and that will also make fish more moist. I kept it for 12 hours or overnite . Next day I washed the pieces in cold water and get ready for the paturi. The fish turn out moist and very soft. Also the salt will neutralize formalin if there is any in the Fish. Many Bangradeshi crook exporters dipped fish in formalin to make it more appealing and longer shelf life for preservation. Ingesting formalin is very harmful.
