Is it worth starting from zero? Since i will play alone and the server is pretty old, pretty much all of the players are geared up etc..

Barely 1 year isn't old for a long-term servak like this, there are many newbs on starting locs, demand for D grades so you won't feel alone, if you really afraid for gear difficulties, there is always an option to drive a char for rewards, no one can box anything.

Easiest way to fight Valakas or any other top Raid Bosses is to ask GM to summon it 😁
