I've never put olives in a boil. Will have to try. Now I've put shelled peanuts, hotdogs, potatoes, corn, turkey necks, sausage. I generally dropped the temperature a little quicker with the frozen corn and then ice ( and yes i put more seasoning to compensate for the ice watering down our pop). Then I soak them about 10 minutes and yank them. I think the ,most important thing is saving the texture so dont want them over cooking. Obviously you want to make sure they take the seasoning but dropping that temperature gets them to take the seasoning quicker. Dont want me a soft crawfish i need that texture. Anyway I ramble, great video boys, it's nice to see us southerners doing our thing while hanging out with the family and friends.

I live in the north east (Quebec, Canada to be precise) and we don't have a ton of access to crayfish......not like the south anyway. But we have ample shrimp and....Atlantic lobster. Being French Canadian with Acadian family members in both Maine and New Brunswick you can beleive the seafood boil is alive an well up here. We have out twist though, we do a massive 4th of July super boil with 100+ lobsters, tons of shrimps and even clams. We keep the same traditions of spices, the holy trinity of veggies, gobs of garlic, liters of lemon juice and endless amounts of a good time!!!
