Never judge a cheese by it's smell! I haven't had limburger but it seems to be a super sharp asiago or Provolone Asiago and Provolone both smell like feet... but you cant have a good Lasagna without them. They're both also great mixed into sausages with tomato and basil... I gotta make some homemade sausages again... If this were a cooking Channel I normally do a 2:2:3 ratio of Asiago/Mozz/Ched... but instead I'd suggest 1:2:3 Limb/Mozz/Ched that would be bomb. You need a funky cheese, a creamy cheese, and cheddar for any great Mac and cheese. If you want the old fashion grandma Mac and cheese sauce though... Orange American cheese or Velveeta mixed with Sharp Cheddar and mozzerella. That makes the orange, stringy, salty goodness that we all remember. Hope these tips will someday bring back your appetite for this heavenly dish. Edit: If you want to do spin offs where you try to make disgusting dishes of the past taste good, I got ya bro, anything can taste good with enough butter, garlic and MSG!
