Hello there Tunisians gourmets people. Being Tunisian myself, I couldn't agree more about the delicassy of this street dish. My topping recipy contains capers, slightly boiled eggs, Tuna, Cumin, olive oil (Tunisian of course, it's the best) pickled cayenne peppers and last but not least, the good old unavoidable Harissa. As for the chickpeas, I also use baking soda to tenderize them. When I set my minds into preparing this lovely dish, It has to go fast, hense the baking soda. Thank you for your channel. Well finally someone is making it right, I came here after watching a Lebanese butchering Lablabi, he thought Harissa is tomato paste, he thought the egg is raw. It was absolute disaster in the other hand this one actually not only close its how supposed to be done 👌👌👌👏👏👍👍

it has Turkish origins , but we in Tunisia made our changes , During the ottomans empire , soldiers were served seasoned Hummos ( chickpeas ) in a bowl , because the lack of enough food . so the Tunisians had to do their twist on it , add some bread , and ofcours the harissa , so they created a new dish with it .

A couple of questions from one Tunisian to another: 1) I am a bit confused if it should be cumin or caraway (or its a combination of both or even combined with coriander seeds); 2) Do you add any garlic in addition to initial garlic in the borth? 3) Yaay or Nejj for baking soda in the water to tenderize the peas?

Elies Bazine Welcome and thank you for watching 🙂 Your questions are welcomed here. 1) Though we Tunisians, like to use Tabil and Caraway in our cooking, for Lablabi, the main spice used is cumin( It's a must ). With that said, If in your recipe, you would like to add other spices, you can. 2) It comes down to personal preference. I add enough garlic in the broth to flavor it and taste it slightly. Same as when you go to a Lablabi shop in Tunisia, you can choose to add extra garlic as a topping or not. 3) I used to use baking soda to tenderize the chickpeas, but I now prefer giving them enough time to cook on their own. I also think adding the baking soda to the broth, may not be suitable for everyone. I hope I answered your questions. If you have any others, you're always welcome to ask. Happy cooking!🙂

Sallam - I emailed this company called 'kartago' I buy 12 cans of authentic Tunisian Harissa like the blad which comes out to 12 cans ($3 a can) + $12 for shipping (if you live in the US) = $52. My husband is Tunisian, as an American I got tired of making it from scratch rehydrating peppers. At least it has served me well since everything has harissa in it. Best way to preparevthe Harissa you need for Lablabi is the homemade way. Fresh red strongly spicy chilli, put it in the el machine to get it as a, paste. Put it in a filter minimum 2 days to loose water, then with shopped garlic and onions mix em all together and keep it outside the fridge, in cold countries it takes up to 15 days Warm countries 5 days or a week is more than enough
