I love this video. I must confess that this was a past life of mine! I think it all would have been easier if we had the ability to blog and have social media 30 years ago! What a huge difference this idea would have been when I had "littles." It's been fun to hear your "kiddo daily show" now and this, almost a year ago! K. Westfall • I see all these comments about ricotta cheese or cottage cheese. I’ve only ever had lasagne with bechamel sauce, but I’m in Europe. Maybe it’s an American things to use cottage/ricotta cheese. In Italy they certainly don’t use ricotta cheese.

Rebeccah Herdener for us we use cottage cheese because I can get a huge tub at Costco for like $4 and I use a cup add some parmesan cheese and an egg and mix it up. My daughter prefers cottage as well.

Not really, Julia. It's a joy and I enjoy serving all these people, especially if I have some food planned out. I realized around two or three kids (and I was still working full-time outside the home) that these people like to eat 😅and they eat all the time. Doing some mega meal planning and freezer cooking here and there helps me keep my footing. When I don't have some things planned and stuff in the freezer it all falls apart 😆

It’s just me and hubby now but I have a hard time downsizing so I quit stressing about it and just use smaller pans and baggies. Old habits die hard. I still have a monthly shop and a monthly freezer meal cooking weekend. We both work full time and it gives us more time with each other and to enjoy our other interests. If you line the bottom of your glass pans with foil and hang over 6 inches of each side, you can fill them, use the 6 inches to fold over and cover the top, freeze it for an hour, then take the wrapped in foil meal out of the dish, wrap over the foiled meal with Saran wrap and stack them in the freezer, then at meal time, pop them back into the glassware for cooking. It frees up your glass dishes for other meal prep days or storage. It also takes up less space in the freezer 😊

Dipping that potato out in a scoop is an ART! Girlie! I have prepared about 100 lbs of potatoes into SCALLOPED POTATOES as a teen. It took me nearly all day. I've watched you for couple of years not commented for long time .l think your channel gives something for everyone to watch.You make very good wholesome food so even mamas with 1 or 2 children can make meals and freeze but just do small amounts.Home made soups were a very big part of my childrens lives as you can hide so much vegetables, lentils,barley,split peas and what ever else.we used to have freezer shop that did small chickens which were suitable for soup stock then once cooked all the meat came off the bones and back in for a chicken soup.noodles or pasta and season and you have it.well done your channel has become larger along with your beautiful family.xxxxxx

I always mix cottage cheese and ricotta cheese because the ricotta is such a strong flavor that my family enjoy it mixed rather than full strength of either one, and is great to us !

There was a time when I didn’t have ricotta or cottage cheese, and found that if you lightly blend extra firm tofu with garlic powder, onion powder, salt, dried basil and oil, you’ll have yourself a wonderful vegan ricotta👍🏻

Sat was cleaning day, Sun I cooked , canned or froze.And I always ironed my kids clothes.How so much easier things are today.6 kids and now I'm 73, but I still like my clothes ironed.you like to cut vegetables, I like to cook and iron.You are such a sweety.

I always do cottage cheese in lasagna! In lasagna i have layers of meatsauce, cottage cheese (with herbs and spices mixed in), pasta and some shredded cheese on top. It is so good, and suuper quick! A very quick weeknight dinner, especially with ready-made sauce and pasta sheets that don't have to be precooked.
