If you like your dosa to be crispy then ask them to serve the masala separately. Potato mixture makes the dosa soggy. Sambar is made differently in different southern states in India. Jaggery makes it sweet in nature.

Yeah you are correct. In some places they add sugar in sambar. Even in our home our mother prefer but I like spicy one. Also in some of curries they add sugar for rich flavor including panner butter masala.

Hi ! Sad you left Mumbai and Maharashtra without tasting Mumbai’s Maharashtrian and Maharashtra’s authentic cuisine, but went around tasting street food guided by a lady who knows the authentic cuisine of Maharashtra as well as that of rest of India, but who somehow was guided by her own personal loyalty food. Nothing wrong in that. But we feel let down that you and your family came all the way to Mumbai and did not have own authentic traditional Maharashtrian dish , of which there are hundreds. Anyway we love your videos. Please find a Maharashtrian delicacy restaurant in Canada or USA. Not that they will be able to serve the authentic Maharashtrian food, because there would hardly be an authentic, complete and original Maharashtrian food restaurant over there. At least it will introduce you to Maharashtrian authentic vegetarian non Vegetarian ( Malvani, Kolhapuri) cuisine. And while Vada Pav and Pav Bhaii were invented in Maharashtra by Maharashtrian people, they are street foods and not the authentic cultural / traditional cuisine foods of Maharashtra. Also I am from the State of Guharat in India but living in the Canada and US back and forth please do consider visiting Surat and Ahmedabad next time when you decide to visit Gujarat, India. You will be surprised to find thousands of Traditional Gujarati, Rajasthani, and Fusion dishes when if you decide to visit places in Surat and Ahmedabad in Gujarat. The sweetness in sambar is from the jagerry added. It's probably Karnataka style sambar- Yummy 😋. *My favourite Sambar is Tamilnadu style. From the Tamil word "Champaram" deformed to Sambar, meaning Spiced Condiment.* You are right, Sambar has to be little spicy & savoury.
