Especially for noodles that are low hydration noodles like ramen, where gluten formation is basically critical to keep em in one piece. Not only that, but at least with ramen noodles it's common laminate the dough over and over in the same direction so the gluten network gets formed into longer strands to make for more structural integrity in a long and thin shape
