Eccles cakes are made with puff pastry instead of shortcrust pastry and were originally served with Lancashire cheese. They can also be oval in shape and are then called Banbury cakes. Eccles cakes are named for the town of Eccles in Lancashire, England, now classified as a town in the City of Salford, Greater Manchester. Though their origin long predates him, it was James Birch who became the first person to sell Eccles cakes commercially in 1793 in the Eccles town centre. Hey Josie! This is my very first public comment on the internet ever. I am a very strange millennial and I pretty much do not exist online as much as one can in 2021 soon to be 2022. I decided to break my silence today on Christmas Eve and wish you and your family a very Merry Christmas! I have wanted to thank you for some time now. Your vlogs got me through a very tough 2020. I had a verbally & emotionally abusive boss, I was working lots of overtime and the U.S had just gone into Lockdown. Everyone was safe in their homes while I was forced to go into work and risk being exposed. I was miserable! I started watching all of your vlogs during that time and they filled me with so much joy that I got up the courage to quit my job in the middle of a pandemic. Long story short, a year and a half later I am working from home, having fun, and at peace. Thank you for being a bright shining star when everything was so dark! The Cricut machine is also great for those with unusual names, my Daughter's are Terrie and Chêlana (Shay-Lana) and my Grand-Daughters are Sophia-Rae, Serafina-Maii and Arliah (R Leah) So finding things with their names on is pretty difficult. Eccles cake is not a mince pie…Mincemeat was once meat..but mincemeat contains dried fruit…suet….spices…chopped apple…nuts …sugar…heated up and stored..Eccles cake are made with currents cooked in the flaky pastry… Note to Charlie..check out Delia Smiths mincemeat recipe …nothing beats it…I’ve made it for thirty plus years and always get requests for mince pies .

The new sofa is called a Knole sofa. It is named for the original sofa that was made for Knole house in Kent. (I recommend a visit to historic Knole house). It was built in the seventeenth century. There is a whole history behind the creation of this style. It is beautiful. Charlie chose well.

We don't have little mince pies here in the US (that I know of) so I order them from a British import store. I love them but my english husband doesn't. His cousin in from Lancashire so I'll have to see if I can get her to send some eccles cakes. My mother used to make large "mincemeat" pies and I remember her grinding up the raisins and other fruit with suet. We had that at Thanksgiving. Your drawing romm is looking so festive, yet cozy!

Love the new sofa. It is so perfect for the room. It looks like a warm hug. I can’t believe how gorgeous and cozy that room is. Perfect for your snuggle evenings in, as well as entertaining.
