Josh, love your recipes! Suggestion: when editing your videos, could you please put the ingredient measurements up on the screen (either in a flash or in captions) so we pause and measure out without missing the steps you go through? Would be a huge help while cooking! Again, thanks so much for your awesome recipes and content!

You've mentioned caption, but have you actually activated the Close Caption (CC)? Life changing for me, that and paper and pencil beside I may be able to make this, and the other recipes he suggests, because I've looked in his book and could't find this recipe. As someone who can’t chop fast…I’d suggest everyone add an extra hour to this time crunch…it’s my experience in every recipe…
@kiltedcripple
@kiltedcripple 2 жыл бұрын
For most people, I'd bet this much cutting is two hours. I love watching these videos, but I'm a very competent home chef and I disregard his time measurements every time. I know what I'm doing and I can't hit his time suggestions (or often budget either, but I digress) but especially when I look at my sisters in law who pretty average home cooks, it would take them an hour to drop three cans of Ro-Tel tomatoes and chiles with a block of Velveeta into their crock pots because they're not particularly organized. They also don't season food, I've spoiled them since marrying into the family, it's been nearly 2 decades and they're still asking me about garlic powder and how it's different from garlic salt. I make spice blends for the households at Christmas just so they can have one jar, measure out one fixed amount of spice, and make a pot of chili, for example. They all work, they're kids are still toddlers, they don't have time for this prep kitchen work, so when we visit, that's what I do, prep kitchen to set them up for future meals. I oil their cutting boards and wooden utensils, I sharpen all their kitchen knives, I clean their fridges, reorganize their Tupperware, etc, to make life when they go to use that stuff easier.

Filming tacked on about 30 mins to this whole thing - we reset cameras and moved them around for each shot. Really full speed this can take 2 hrs 30. I think you’re selling yourself short! Cutting all veg took maybe 5-8 mins while filming. Even if I went slow (and I’m no means even close to a pro chef) it would probably take me 15 mins max. I wouldn’t tack on an extra hour or two to cut some vegetables :)

Made the garlic parm knots today for practice, (hey, the teams practice too) they came out fantastic. I was a little concerned when I added the butter to the dough, it got really greasy (I just may have softened it a little bit too much), but the finished product was perfect. Only negative was that my "extra aged" parm wasn't hard enough to give me the fine grating I wanted. That must be the difference between made in Wisconsin vs Italy. Pretty confident now that tomorrow's knots will be raved about. (BTW, one error in the video - he mentions using unsalted butter for the garlic butter sauce, however the linked recipe says to use salted.)

Great looking and delicious food. There is one thing that you do have to prep for, that is your guacamole. You have to get those at the grocery store, or big box store several days ahead. Otherwise, if you go to the store looking for nice looking, tasting and soft enough avocados, you are going to be left with rock hard ones that you could never hope to mash. And.. you have to get the other ingredients, or you will be searching all over for those things that you can also never hope to find. Prep, prep, prep..... :) Sunday's coming up fast. I have no idea how long ago they were cut, but for me, they arrive on site already cut and trayed, so at least one overnight each in the warehouse and at the store, probably also one at the facility they were chopped at. Add in the delays for getting together that much volume and *shudders*

The thing I always notice about these cooking shows is that the food is great, but impossible to cook without wastage. I challenge you to cook 7 days worth of gourmet meals for one person with no wastage on a budget of 100 dollars.

I made the mistake of attempting this spread for the game. First, the ingredients have almost no overlap between recipes. Amylase is nearly impossible to find locally. Thai Basil was also no where to be found. Lots of wastage. Way more than 3 hours cooking. Never even made it to the wings. Whatever was made tasted good, but he definitely overstated the easiness of this spread.

I don't know where you're getting your deli platters that they are "sliced and sitting in there for 14 days", but years ago when I worked at the Food Lion Deli, all of our meat and cheese trays were made to order the night before you scheduled to pick them up and as long as you weren't ordered them on a super high volume day like the day of the Superbowl, pretty much any other day of the year we could have them ready same day.

I can do all this in just under 3 hours . It's all about prep and time management honestly just start the day before if you think it's gonna take you a while . Day before make the cheese board ,then prep all your ingredients and refrigerate . Then on the day it's just cooking and can be done in just over 1 hour and a half . 👌
