Drunk version. You can tell in most of these that he's plastered. In this one, the stirring of the egg with the chopsticks and the jalapeno cutting give it away. Also, the breathing is because he has shallow breathe, from alcohol. No judgment though, I've been on a Quarantine Bender myself. Shit times equate to self-medicating.

Along with all these other great suggestions, you might also try storing the cleaned scallions in a damp paper towel inside a baggie. I always cut off the roots before bagging them. Then you can put the roots in water for a few days to sprout and plant for more green onions if you want to be a little extra.

Migas is one of those dishes that I wish more people knew about. I make it for my family when I visit for holidays and everyone loves it. I will usually be lazy and use salsa rather than the pepper and onion chopping and sauteeing. Eggs, tortilla chips, salsa. That's all you need. But cheese and other accouterment are very welcome.

I just love how many styles of cooking you seem to love and display. I learned to cook from all of Gordon Ramsay’s instructional videos, but really haven’t watched many cooking vids since then until now, and I’ve been binging on your vids and trying to make some of them which turn out great. Your getting me almost to the point of trying Chinese or Asian cooking. I’ve always been psyched out by the unfamiliar ingredients and unfamiliar methods compared to the basic French stuff that learned from Ramsay.

This is an incredible dish to make, and extremely cheap. Back when I was in college I used to buy 2 pounds of corn tortillas, eggs, onions and vegetables for about 3 dollars. I would fry the tortillas and break them up and in the same oil throw in the eggs with the vegetables. Could do like 3 days or more worth of meals from that, I sometimes added deseeded tomatoes, and always had a habanero, serrano, tomatillo and avocado sauce I made. I also always had black beans in my refrigerator because it was soo cheap. 2 pounds of uncooked beans could last me like 2 weeks lol. Good times

Migas are a day-after dish for me. I use leftover tortillas and salsa bandera. Tear/cut tortillas, fry in oil. Add eggs, scramble. Add salsa, stir, cook briefly. Serve with cilantro and queso fresco next to leftover refritos. Variants: If no salsa, remove tortillas once cooked, fry fresh veg (onion+chiles+?), then reintroduce tortillas with eggs. If no tortillas, use chips instead. Can add leftover meat.

Hi kenji! I believe you recently started using the motion stabilization tool a bit more frequently (maybe youve always used it) because some viewers were complaining about the shake. However... I am of the opinion that during times when the stabilization ends up cropping and zooming a lot (like around @2:20) the viewing experience is not worth the tradeoff. my 2c! love u thanks for teaching me everything i know
