Hi Laura, I made this roast for Christmas and it was the best roast I ever made. I checked it at 35 minutes and decided it was done at 130° (it was slightly under three pounds). It was perfect. I like my beef rare/med rare. It sliced beautifully and like you said, the leftovers are amazing! This is going to be a "regular" menu item at my house. Thank you and Happy New Year.

This brings back memories of my uncle doing a eye of round on the grill rotisserie, I think he used a similiar mix as you used for marinating but he basted with it. It was beyond delicious and everyone was happy because of the gradation from med rare to med. I love the med rare. I'm with you on the horseradish, more is better! :)

I have made this several times and it always turns out wonderful. I've learned to cook it to just 115° F because I am an adult who likes it rare! It continues to cook (as Laura says) and the temp will rise more as it "rests." It's my favorite "Sunday Dinner."

I usually fix a roast for Sunday dinner, after Mass. I rotate beef, lamb, pork and chicken. I do roast potatoes done with goose fat. If it’s a cheaper roast like rump, or eye of round, I like to sous vide it. It comes out much more tender and I don’t have to worry about overcooking it. I sear it after the sous vide.

(i just love bread 🙈) im contemplating getting this maybe as a side or maybe cook it in between Christmas and new years, as those days are usually a bit of a question mark when it comes to food. Allthough I am expecting to be eating leftovers as well, as I'm getting a big 6 kilogram turkey. We've been doing beef wellington the last few years, but found it was time for something else this year. As we don't have Thanksgiving in the Netherlands, we don't eat turkey then and so turkey is a real traditional Christmas food here. As im thinking about the idea of the leftover roast beef sandwich, im also thinking leftover turkey sandwich AND.... most of us probably remember Ross's (stolen) turkey sandwich and the moistmaker 😅😅 Im thinking if anyone could replicate that and give us an amazing recipe for that, its Laura 😁 I know the turkey thing is not relevant atm in the US, because you've already had it at Thanksgiving, but perhaps a leftover *anything* sandwich could be relevant? 🙈

Cooking an eye of round or a similar roast medium well, or well done turns it into leather. Unfortunate but true. If it’s rare or medium rare and you slice it thin it’s OK. It’s certainly not prime rib. I often sous vide mine, which helps. I lucked out just before Christmas. My husband picked up four prime ribs at 7.95 a pound.

I am disabled, apparently America (the great) thinks I’m only worth 206.00 dollars a month for food. As of now I can only eat frozen china food every other day. Is it possible ( in any way) that I can eat everyday ( 28-31) days a month? And actually taste good?

Eating for just survival is awful. Not once have I wished for my physical ailments, but yet, I’m forced to everyone else’s what they think I only deserve. I’ve worked for 28 years in extreme pain knowing if I filed for disability, it would be hell. Before I filed , I made sure my house and property was paid off. Now a days, I’m gonna lose my home because I can’t pay the ripoff property taxes. 80 % goes to schools, ( I do not have children) I live in wooded areas with no services other people than an ambulance ( which may arrive 30 minutes after I’m dead) yay for the crippled!!!!!

It’s really not that serious but some people will find just about anything to complain about. I stand by my statement because it NEVER fails I get berated when cutting into a rare beef so if anyone watching that feels the need to comment how “gross” it is than yes, grow up.
