With its appearance, lava cake caused a real stir among cakes because, unlike most, it is made quickly and eaten immediately! There is no waiting for it to cool down, harden, "overnight" in the fridge - quite the opposite:) There is an opinion about this cake that it is difficult to combine all the elements so that it turns out just liquid in the middle with a crust around, and that's why we are here to break that prejudice . Enjoy, write, try!
RECIPE
Turn on the oven at 220'
-200g of butter
-220g of dark chocolate
-3 egg yolks
-3 whole eggs
-120g of sugar
a little salt
a teaspoon of vanilla
120g of flour
Melt the butter and chocolate together until combined (no need for steam, as they usually state).
In another bowl, beat the eggs, sugar, salt and vanilla but NOT too much (no need to make it thick and foamy). Add chocolate and butter and mix. Add the flour and mix gently (without a mixer).
Lubricate the mould/moulds well with butter and sprinkle with cocoa powder (or flour), pour the mixture and bake in a heated oven for 7-11 minutes (depends on the oven and the size of the moulds). I baked mine for 9 min. According to experience, larger praying mantises are baked for 10-11 minutes, medium ones for 8-9, and smaller ones for about 7 minutes. Lava cake is best when eaten hot, alone, or sprinkled with powdered sugar (which is actually only there for decoration), raspberries, ice cream... Don't worry about the excess, it's also great when it's cooled, like juicy muffins:)
