When do you guys typically follow these? Im just about to start learning soon and I dunno when to dive in on these

These are very advanced movements. Before you do these you need to learn hammer ons and pull offs, and get good at them. You need to practice with your pinky alot and play different things to make your fingers move independently. Alternate picking is a must and thats the hardest for most people (picking up and down). All in all i wouldnt touch this until you learn the basics, atleast 2 months of consistent practice id say

Is there a way to keep your pinky from flying high? Mine seems to start floating so far from the fret board it reduces time.

He probably has about 20+ videos on that exact topic. Try some of his finger independence exercises, which aim to minimise unnecessary finger movement, especially in the pinkie. Worked for me.
