It isn't so much that she wants to torture him; her possessions harbour a deep hatred for him and curse him, tranforming him into a monster. The "torture" he has to endure is his body being physically cut open as she removes the curses. Hope that helps :)

Yes, her ex-fiance was the one who killed her, but at one point, she (and her possessions) believe Eiri to be a reincarnation of him (or something to that effect; the anime isn't terribly clear about that) The possessions hate Eiri for this, which is why they curse him. Cossette doesn't hate Eiri, but I'm sure she probably finds the idea of confronting who she believes to be her reincarnated murdererer somewhat disturbing.
