Bronze layer is it works like staging or something more. do we need kept all data ?

I don't find the information correct. There does not seem to be "100's" of connector in Fabric Pipelines. There are in ADF. For example I am only seeing the salesforce connector in dataflows not in pipelines. Which is not what was mentioned in the video
