I'm making this tonight and I'm using pepper jack cheese for a little kick. I guess it will work. I use it on my streamed vegetables like broccoli, squash and carrots. I stream my carrots for about 10 minutes then add my frozen broccoli spears and fresh squash. I cut the cheese up and put on vegetables. I do put some fresh lemon juice on vegetables first then cheese. Kids love this and the cheese is not that hot on the vegetables. You can just use mozzarella or cheese blends. Great way for kids to get their calcium and vegetables.

I forgot to add to drain water from vegetables after cooked and then add lemon juice and cheese. Just stir into vegetables. After cooking fresh carrots add broccoli and fresh squash and stream for 8 minutes more. It takes a little longer to stream carrots. I use the regular carrots and cut up. Baby carrots take to long for me to stream. You can cook the baby carrots in a little water first and add to vegetables or not.
