Yes, flautas are basically fried rolled-up tacos. Taquito just translates to "small taco", so it can be any kind of taco. And, yes, quesadillas are basically tortillas with cheese inside. Whether you add any other fillings it is still a quesadilla, don't let chilangos tell you otherwise.

I have been cooking for many years and cheese water/broth is not a thing....making homemade cheeses sauce is very simple. And tortillas are cheap so although I have made my own, it's not worth it for me
