Why do they never take the central pawns?

Because after that cannon will be a target for knights developing with tempo. In the xiangqi openings speed is more important than material.

@@asianchess They do take the central pawn, when they can, but NOT in the opening, for the reasons you stated. Later, however, if you can take your opponent's central pawn with a cannon AND MAINTAIN IT THERE -- you have a definite advantage.

Not "plus" and "minus." This is not arithmetic. You are talking about directions, not amounts. Say "XX forward three" or "XX back two" etc.

LoL. First of all, that's how the official notation is in xiangqi.. with plus and minus.. That's more than enough for him to be right. And second, yes, it can be understood as arithmetics and amounts.. increasing the amount means a forward move, decreasing it means a backward move.
