Choux Pastry Roll - is it your creation? The pastry is for Eclaires and Chaux a la Creme. I saw a Polish recipie with 2 pastries top and bottom and vanilla pudding cream mixed with whipped cream in the middle.

I made the filling today as a lemon filling, and put it in a pie. It is easier to make starting with lemon pudding, then combine with the whipped cream, using a little sugar in the cream. It is the same recipe that I got from a Bavarian Baker's daughter. It was his secret recipe and only divulged it to his son-in-law. Being German, girls did not count. Anyway, the filling is delicious and I can see that in the rolled cake it would be just great. Maybe someday I will make one of those too, but it really busts my diet on no sugar or wheat!
