Leek & Potato soup - With a twist

This made around 4 servings - For the soup I used:
- 350g Potatoes
- 125g Parsnip (can replace this with 100g potato)
- 330g Leeks
- 1 Onion
- 1 Bay leaf
- 4 Garlic cloves
- 35g butter (total)
- 715ml of homemade stock + 200ml water (half a stock cube)
- 85ml single cream
- 2 chicken breasts ( 25mins @ 180°C)
