Assuming you're asking about outlines, the survivors are to always be a visible outline visible to the zombie players, however this outline is also based on the human players current health. The last clip is just an absolute lack of awareness from the tank. Edit: Also after finding a legitimate post about this, Crouching and turning off your flashlight *can* put you into an aptly named 'Stealth' mode, but it does take a moment.

I believe it's revealed if they shoot or run, maybe on voicelines too. So yeah, you *can* hide, if your character doesn't start screaming about things and alerting via sheer noise alone (and maybe the outline?)
