LEFTOVER TURKEY& DUMPLINGS & MORE! | DAY IN THE LIFE

Hey family!! Today's video is lots of random after Thanksgiving cooking and more...🤣🦃
Here's the recipe for the Turkey & Dumplings, only with chicken...😄

Ingredients:
SOUP
2 tablespoons vegetable oil
2 lb boneless, skinless chicken breast, cubed (NOTE: I use more chicken.)
1 cup diced yellow onion
1 cup sliced carrot
3 cloves garlic cloves, minced
1 teaspoon salt
5 tablespoons unsalted butter
6 tablespoons all-purpose flour
6 cups chicken broth
½ cup heavy cream
½ teaspoon dried thyme
2 bay leaves
1 ½ cups frozen peas
4 tablespoons fresh parsley, minced
DUMPLINGS
2 cups all-purpose flour
1 tablespoon baking powder
½ teaspoon salt
½ teaspoon pepper
1 ⅓ cups heavy cream
In a 6-quart Dutch oven, heat the vegetable oil over medium-high heat. Add the chicken and cook until browned on both sides. Remove from the pot and set aside.
Add carrot and onion and cook until just tender, about 3 minutes.
Add the garlic and stir for another minute, until fragrant.
Reduce the heat to medium-low and add the butter and flour, stirring constantly for 3 minutes to prevent lumps from forming.
Add the chicken and any accumulated juices back to the pot and stir to coat in the roux.
Add the chicken broth, cream, thyme, and bay leaves and bring to a simmer. Once soup is at a simmer, add the frozen peas, cover, and cook for 15 minutes.
Make the dumplings: In a large bowl, combine the flour, baking powder, salt, pepper, and cream. Stir until mixture comes together into single mass of dough.
Using a large spoon or ice cream scoop, form the dough into small round balls about 1 inch (2 ½ cm) in diameter (the dough should yield 14-16 dumplings).
Place the dough balls in the simmering soup (making sure they don’t touch), add the parsley, and cover. Let the soup simmer for 15 minutes, or until the dumplings are cooked through.

The holidays will be different for our family. My husband was diagnosed with an inoperable brain tumor last Monday. We are devastated. May I ask for prayers for healing of my husband and for our boys and myself as we navigate our future? I feel the Lord is with us and know that with prayer all things are possible.

Sissy and Manley playing hide and seek was so sweet. The turkey and dumplings looked good. My grandmother made the best dumplings. I have never been able to duplicate them. She rolled hers out and dropped them into hot broth. I think her secret ingredient was extra love ❤

One of my favorites that Titus was singing. And he was singing it well. Turkey sandwiches are one of my favorite things in life! And nothing fancy! ☺ Maybe some thin sliced onion and mayo. When I used to roast a Turkey, I boiled the carcass for soup or stock, then I would make Turkey pot pie. It was usually at the tail end of about everything. Add stuffing, sweet potatoes, mashed potatoes,gravy, just clean up on everything. Really delish! 🥰

My Momma many years ago would make a layered casserole out of the leftovers. Bottom layer would be the dressing then the rest. , Turkey whatever. Corn peas whatever. End with mashed potatoes and gravy. Bake. To me it was the best part of the season meal. I am 67 now and it is a special memory of my Momma. BTW her name was Georgia.

Our default for leftover turkey is turkeytillas. Tortilla, leftover turkey chunks/shreds, shredded cheese, sprinkle of garlic salt. Fold over, bake til bubbly-nice. Serve with sour cream, salsa, and/or ketchup for dipping. So good!

I am *all for leftovers* for sure! We typically order our meat from the butcher, which is pork loin (so nice and tasty), for 2 days at Christmas, Eve and Day of. And then for New Year, Eve and Day of. It's a meat my parents (mid-70s) can still eat really well (softer) and it comes with a nice sauce these festive days. We get it ready-made, so we just have to warm it up come dinner time. Makes it easier on my folks.
