Try *Ultraman Gaia* (1999) first. It's standalone and not bogged down by previous continuity. It also has good balance between dark & lighthearted. It also has the first Ultraman rival/frenemy in Ultraman Agul.

Honestly depends on what you're looking for. Ultraman is a franchise that pays to watch from the beginning more then other tokus, but some good starter seasons imo are the original from 1966, max from 2005 or x from 2015.
