I think Vader is meant to be White. The pink is just from the environment around him. Probably a reference to a what-if story of Vader surviving after ROTJ. On the twitter page he also appears to have a white saber.

Basically the entire Lego Star Wars universe is a what-if. Honestly, it’s some of the best Star Wars any fan could watch because you don’t have to worry about lore brake or anything serious, it’s all for fun, and that’s what I love about Lego Star Wars

Ay guys me just watching the Star Wars rebuild the galexy and having mixed opinions but overall good tbh. I’m not gonna spoil anything because you’re not allowed too. I watched it 3 days early I’m pretty sure but his brother Dev was on the dark side when the universe changed. It’s also funny movie have fun watching when you do.

7:48 That might have been the lighting but I believe it to be white Vader. It was a refence to the 'what if' comics done awhile ago where Vader turned to good and joined the Rebellion and the Emperor survived over the battle of Endor.
