1:54 why white don't play Nc8, winning the pinned bisjop?

Does Nc8 “win” the bishop on e7? Black can play rxc8 and if white plays Qxe7+, the black king can hide nicely on g6 and its just a trade of knight for bishop. After nc8 rxc8, white cant take the rook on c8 because the bishop on d6 is hanging
