Just an update: My family loved these lemon bars. I made an adjustment on the amount of sugar in the recipe because some members in my family are diabetic so I only used 1/4 cup of sugar, added a little more lemon juice and zest and they came out fantastic. By popular vote from my family members, this recipe is now added to our Thanksgiving tradition. Thank you Chef John and blessings to all.

I just tried those. Simple to cook and totally amazing, tastes like something I'd pay good money for. But a single recommendation to others that might try this recipe: put a little less sugar into the lemon layer or be ready with some tea, because they're going to be very sweet. Right after you take the pie out of the oven, the top layer will be soft, but it doesn't mean it's not ready - the top will dry up and become firm when it cools off. Oh, and the meringue is mandatory, I'm telling you, it goes so well with the sweet lemon flavor.

That's okay if it'll just affect the color. We don't buy white sugar in my household, so I want to try it out with what we got.

haha, LOL, just commented that I only had a 9x9 pan. It worked great. A tiny bit thinner, but minimal, and I don't mind a slightly thinner Lemon Bar.

I made this today and they turned out great, but I used only 1/2 cup of sugar for the lemon layer and it was still quite sweet. My suggestion - if you're not an American you may want to reduce the amount of sugar in this recipe.

Sarah Carvalho What a great fucking generalization. What makes you so knowledgeable about what Americans eat for breakfast, did you take it upon yourself to inspect every household's cabinets just to find out what kind of breakfasts they eat? Just because we sell sweet breakfasts, which is mainly so the shithead kids eat something for breakfast and don't starve themselves, does not mean that we all eat sweets every day. Most people prefer to stay away anyways for health reasons, or if you're like me, don't have the palette for sweets.

I loved that you found a use for the egg white. I try to save it and use it for something but i usually end up tossing it after its been in the fridge for a while and always hurts a little to waste it.

I made these last week. They are amazing. I gave some to friends, partly because I live alone and figured I wouldn't eat them all, but mostly to show off. Raves all around! In Australia and, I think, the UK, we call these sorts of treats slices, for obvious reasons. These are lemon slices, what you call millionaire's shortbread we call caramel slices etc. By the way, in Australia when we make caramel slices, we tend to add dessicated coconut to the base recipe and it is exceptionally tasty. I'm actually going to give that base a try for my next lemon slice just to change things up a little as I love lemon and coconut together. I love lemon slices and your recipe is pretty much the same as mine except that when I do top them with meringue (not always but I do sometimes) I make Italian meringue as it holds its volume much better. They're so tasty and more-ish!

The dough wasn't enough to spread so I made another batch (which was cool with me) and baked it for 40 minutes instead of 22. (I did 40 instead of 44 because I didn't want to over bake it) I followed everything else. I love it!! Thank you.

Confectionery sugar isn't plain powder sugar, it contains some corn starch to keep it loose and help to stick on the surface when coating.

powdered sugar also has cornstarch in it. they're truly the same thing, just with different names.

I just made these two days ago, and they are AMAZEBALLS! I followed the recipe exactly, and they are beyond easy and practically foolproof. Short of leaving them in the oven too long, I can't think of how you can mess these up. And I definitely recommend following Chef John's recommendation: refrigerate them first. I tried one after they'd cooled to room temperature, and I was kind of disappointed. The curd was fine, but the cookie part was all dry and crumbly. Not as satisfying as I expected. Then I stuck them in the fridge and tried them again the next day, and miraculously the cookie changed into EXACTLY what it was supposed to be like. Great recipe, Chef! Thanks!

I am making these right now during quarantine (April 2020) . It’s in the oven. My house smells lemony divine. I’m going to be really good and be patient and let it cool entirely before I start slicing it. It’ll be difficult though.... thanks Chef John. It’s now the next day - these bars are excellent!!!!! I made half w confectioners’ sugar sprinkled on top and the other half w meringue. It’s an Impress your friends kind of dessert. ❤️

These turned out well save for two problems. My dough did not come out as malleable as in the video, and started pulling up when I tried docking it. I also needed to butter the sides of my baking dish more thoroughly, the edges of my bars are all but bonded to the pan (it will take an overnight soak to loosen them). They tasted good but I'm sure glad I wasn't presenting them to anyone. Er, I mean I'm glad my guests didn't mind since I totally didn't make a whole pan of lemon bars for just myself.

Not really an expert but it sounds like you needed more flour in your mixture so it doesn't pull upward, could be wrong but it sounded wetter from your description. The other problem can be fixed using parchment paper.

Made few of your recipes and all of them were great. few tweaks needed, usually with the amount of flower, as I am in Europe and we use metric. This recipe is wonderful. Next time I will put just a bit of less sugar. As time goes it becomes better and better. Its not good that I am on a diet at the same time that I am making these, temptation is trough the roof.

Made this yesterday..i think I overcooked the shortbread crust slightly because i didnt realize my oven rack was near the bottom coil.. but other than that this was so delicious.. perfect recipe..so easy and foolproof.. i used lemon and lime juice/zest.. thank you so much chef John! will definetely make again and add my own twist! You touch our lives in such simple and meaningful ways Chef John, thank you!!

Today I attempted to make these for my mothers birthday. When I put carefully crafted treats into my perfectly preheated oven the crust was on the bottom and the lemon on top, as is only proper. However when I took them out 25 minutes later the lemon was on bottom and the crust on top. I do not understand how this happened.

That's what happens with things like peach cobbler. You pour the batter over the fruit but it switches places in the oven. For this recipe I would guess that maybe your crust wasnt cooked enough before adding the lemon curd

I am still catching up on some of the older recipes. I am loving this recipe. You can go so many different directions. Using different citrus &/or fruits. I was shocked to see some meyer lemons in my grocery store yesterday evening. I think I'm going for it.

use a 8 by 8 pan or your lemon bar will just be crust

There are so many different versions of these cookie/bars and they're ALL amazing! I found one years ago that uses a lemon cake mix for the base and has lemon juice, confectioners sugar and cream cheese for the custard layer. That one is excellent too!

I made this recipe today. It was my first time eating let alone making lemon bars! I was drawn to this recipe bc it only used 2 eggs rather than the 8 being used in most other recipes. I put a touch less sugar and butter. It was delicious! I was worried that my filling was much more orange than the one in the video, but it was still great. Thank you!

Tried them. WOW... turned out great. I did not add zest because my fresh lemon juice was pulpy (I know, different taste signatures, but that was my reasoning). I only had a 9x9 pan, they were a bit thinner but in a good way. Did not do the meringue. Wish I would have baked them a few minutes longer. These are excellent.

We had a meyer lemon tree outside our kitchen window growing up. Lemon squares were my favorite dessert snack to make. I did use a more crumby shortbread dough, though not by much
